BBQ Pork Puff Pastry叉烧酥

There are some marinated mince pork in the fridge, so I decided to make pork puff for dessert.







BBQ Pork Puff Pastry叉烧酥


Ingredients

Water Dough水油皮:

110g   All purpose flour 中筋面粉

35g  Lard or shortening 猪油或白油

20g  Sugar 白沙糖

40g  Boiling water 热开水

* Mix all ingredients to form a dough, wrapped and rest for 15 minutes.


Oil dough油皮:

45g  Lard or shortening 猪油或白油

90g  Cake flour 低筋面粉

* Mix all ingredients to form a dough, wrapped and rest for 15 minutes.


Fillings内陷

150g Minced pork belly五花肉碎

Half an onion 洋葱

1 tsp Oyster sauce 蚝油

1 tbspSugar 砂糖适量

1 tbsp Honey 蜂蜜

Water 水适量

1 tsp Sesame oil

1tsp Dark Soy Sauce 黑酱油

1tsp  Char siu Sauce 叉烧酱

A little corn starch & water 玉米淀粉水


Decorateon puff skin 装饰:

10g White sesame seeds 白芝麻

1  Egg yolk 蛋黄


Steps 1:

1. To make the filling: 

2. In a frying pan, heat vegetable oil and cook onions until tender. 

3. Add mince pork and fry for 3 minutes. 

4. Add oyster sauce, char siu sauce, sugar, honey, sesame oil, dark soy sauce, and water. Simmer for 3 minute then add in corn starch water and cook until the sauce is thickened. Cool in the refrigerator for at least an hour.

Steps 2:

1. Divide the water dough into 10 equal portions.

2. Divide the oil dough into 10 equal portions.

3. Wrap the oil dough into the water dough (the oil dough is in the center) and round it, and rest for 10 minutes.

4. Flatten the dough, roll up and flatten again, repeat this action 2 times. Fold in three folds, and finally flatten again.

5. Wrap the filling, roll and seal. Brush egg yolk on top and sprinkle with sesame seeds.

6. Bake in the preheated oven at 200°C for 15 minutes.


做法1 :

1. 洋葱切丁

2. 准备平底锅,放入少许油,倒入洋葱炒软,放入肉碎、叉烧酱、蚝油、糖、蜂蜜、水,拌炒至熟

3. 勾芡(生粉水),冷藏备用。


做法2:

1. 水皮及油皮分别搓匀分成10等份。

2. 将水皮包入油皮(油皮在中央)滚圆,醒面10分钟。

3. 压平,再卷起再压平,重覆此动作2次。折三折,最后擀平。

4. 包入义烧饀料,压紧接合处扫上蛋黄液,洒上芝麻。

5. 以200°C预热烤箱烤15分钟。
