Peach Blossom Pastry 桃花酥 (1)

My dear friends arranged a lunch date to celebrate my birthday with another friend ~ Jullie same birthday month as me. We are March babies😉

I baked some lovely pastries for my dear friends. I packed these pastries in a nice plastic case. Everyone was amazed after saw these pastries. Some of them said the pastry is too beautiful and unwilling to eat it. Hahaha...😊

Peach Blossom Pastry 桃花酥


Ingredients:

(A) Water dough

80g  Plain flour

25g  Shortening 

35g  Water

15g  Icing Sugar


(B) Shortening dough

55g   Cake flour      

35g   Shortening

Pink food colouring

Filling :

Red Bean Paste: 135g( Divide into 9 portions, 15g each) 

Glazing:

1 egg yolk

Some black and white sesame seeds


Method:

1. Mix (A)  till you get a smooth dough. Wrapped in cling wrap and set aside for 30 minutes.  

2. Mix (B)  till you get a smooth dough. Wrapped in cling wrap and set aside for 30 minutes.  

3. Divide the dough (A) and (B) into 10 equal portions. For dough(A), 15g each and for dough (B), 7g each.

4. Flatten the water dough and lay the oil dough, closed and gently roll into a ball.  Rest for 15 minutes.

5. Roll out the dough into a rectangle and swiss roll up again. Rest for 15 minutes.

6. Press in the middle and join both side. Press down again and use a rolling pin to flaten the dough.  Wrap in the filling, pinch and seal. Use your palm flatten the dough and with a rolling pin to help to make a circle shape. Cut 5 slits and pinch to form the petals. Repeat for the rest of the doughs.  

7. Brush some egg yolk in the center with a chopstick dipped in egg wash.  Sprinkle some sesame seeds into the dimple to make the center of the flower design. 

8.  Bake in a preheated oven at 180℃ for 22 minutes.  


材料:                                                              

(A)水油皮                                                                               

80克  中筋面粉

25克   起酥油

35克   水

15克   糖粉


(B)油酥                                                                                

55克   中筋面粉

35克   起酥油

粉色食用素  


馅料 :

150克  红豆沙(分为10份,每份15克)

装饰:

1个蛋黄

一些黑白芝麻


方法:

1.混合材料(A),直到光滑的面团。用保鲜膜包好,静置30分钟。

2.混合材料(B),直到面团变得光滑为止。用保鲜膜包好,静置30分钟。

3.将面团(A)和(B)分成10等份。面团(A),每个15克;面团(B),每个7克。

4.压平面团并包入油面团,将其滚成一个球。静置15分钟。

5.将面团滚成一个矩形,然后再次卷起。静置15分钟。

6.中间压入并连接两侧。再次按下并用擀面杖将面团弄平。将馅料包好,捏紧并密封。用手掌将面团弄平,并用擀面杖擀成圆形。切开5个狭缝并捏成花瓣。重复其余的面团。

7.用蘸有蛋液的筷子在中心刷一些蛋黄。将一些芝麻撒在蛋液中,使其成为花朵的中心。

8.在170℃的预热烤箱中烘烤22分钟。
