Matcha Cake/Green Tea Cake 抹茶蛋糕

Yeah, my birthday celebrations! I made a Green Tea Cake for myself!😉😘

Matcha Cake/Green Tea Cake 抹茶蛋糕


Ingredients:

4   egg yolks( size A)

15g castor sugar

60g sunflower oil

60g  milk

80 g cake flour

10g matcha powder 

4   egg whites

1 tsp lemon juices

70g castor sugar


Cream Cheese Whipped cream:

250g Cream cheese

580g Whipping cream

125g  Powdered sugar

1 tsp vanilla extract

1 tsp green tea powder


Instructions:

To make cake:

  1. Preheat oven to 150°C.
  2. Whisk castor sugar with egg yolks till dissolved. Add  oil. Whisk till just combined. Add in matcha powder and sifted cake flour into mixture three batches.Mix well and set aside.
  3. Add lemon juices.  Whisk egg whites till thick foam forms. Gradually add  castor sugar and continue to whisk till firm peak stage.
  4. Thoroughly whisk yolk mixture, which should be smooth now. Add 1/3 of egg whites. Mix with whisk till almost even. Add remaining egg whites. Fold with spatula till just evenly mixed.
  5. Pour batter into cake pan. Jiggle pan till batter is level.
  6. Bake for 25 minutes at 150C and increace to 170C and continue bake for 30 minutes.
  7. Remove pans from oven. As soon as cake is cool, unmould cake. 


To make whipped cream:

  1. Whisk cream cheese till creamy. 
  2. Add in powdered sugar and beat till incorporated
  3. Add in vanilla extract and mix well.
  4. Slowly add in whipping cream in 4 batches and beat till just thick enough to hold its shape. 
  5. Divide the cream and one portion mix with matcha powder (mix well). 


To assemble:

  1. Cut cake horizontally with serrated knife or cake slicer into 4 equal slices. 
  2. Set aside bottom slice of cake. Spread with  whipped cream cheese. Top with a slice of cake, and spread with whipped cream cheese. Continue with rest of the cake slices,  
  3. Smooth top and side with whipped cream cheese. Decorate it as you like!
  4. Transfer cake to serving plate. Refrigerate till ready to serve.
