一直想做春卷好久了! 这次终于做来吃了!好香好好吃,只是稍微咸了些。😉

五香肉卷/ 春卷

材料:

腐竹皮 2大片

肉碎【80%瘦肉/20%肥肉】1kg

沙葛/马蹄【切末】160g

大葱【切末】120g

青葱【切末】适量

红萝卜【切末】 100g

蒜头【切末】2汤匙

葱头仔【切末】2汤匙

姜【切末】1汤匙

玉米粉 2汤匙

葱头油 2汤匙

面粉 1汤匙


包肉卷时用

清水 少许


食油 适量(炸春卷用)


调味料:

五香粉 1茶匙

盐  1 茶匙

糖  1 茶匙

酱油  2汤匙

蚝油  2汤匙

麻油  1汤匙

花雕酒  2汤匙


做法:

1. 用干净的湿布,把腐竹皮表面的盐分抹去,减少咸度。

2. 准备少许面粉和清水,搅拌均匀面糊,备用。

3. 加入调味料,搅拌均匀。

4. 再加入沙葛末、大葱末、蒜末、葱末、姜末、红萝卜末、玉米粉、1汤匙面粉入肉碎,搅拌均匀。

5. 放入冰箱冻30分钟。

6. 拿一片腐竹皮,裹入肉馅,卷起。

7. 涂上面糊,收口,就包好了。

8. 放入冰箱冻30分钟。

9. 烧热油,把五香肉卷抹上薄薄一层玉米粉,加入热锅炸至金黄色,沥干油即可。


*从步骤8开始,省略将肉卷冷藏的步骤,在高温下蒸30分钟。冷却并保存在密封的容器中,并冷冻更长的时间。当您想吃时,无需解冻,只需将它们直接在热油中炸至金黄色即可。


Homemade Meat Rolls/ Spring Rolls


Ingredients:

Bean curd skin 2 large pieces

Minced meat [80% lean meat/20% fat meat] 1kg

Chopped Jicama/ water chestnut 130g

Chopped onion 100g

Chopped spring onion little

Chopped carrot 70g

Chopped Garlic 2 tbsps

Chopped Shallots 2 tbsps

Chopped  ginger 1 tbsp

Shallot oil 2 tbsps

Corn flour 2 tbsp

Flour 1 tbsp


Use when wrapping meat rolls:

Clear water


Right amount of cooking oil (for frying spring rolls)


Seasonings:

1 tsp five-spice powder

1 tsp salt

1 tsp sugar

2 tablespoons of soy sauce

2 tablespoons of oyster sauce

1 tablespoon of sesame oil

2 tablespoons of Huadiao wine


Method:

1. Use a clean cloth to wipe off the salt on the surface of the bean curd skin to reduce the saltiness.

2. Prepare a little flour and water, stir the batter evenly and set aside.

3. Add seasonings and mix well.

4. Add the chopped jicama, chopped green onion, chopped garlic, chopped green onion, chopped ginger, chopped carrot, corn flour, and 1 tablespoon flour into the minced meat and mix well.

5. Place in the refrigerator and freeze for 30 minutes.

6. Take a piece of bean curd skin, wrap it in meat filling and roll up.

7. Apply the batter, close it, and wrap it up.

8. Place in the refrigerator and freeze for 30 minutes.

9. Heat the oil, spread a thin layer of corn flour on the meat rolls,  and fry until golden brown, and drain the oil.


* From step 8,  omit the step to refrigerate the meat rools, steam on high heat for 30 minutes. Cooled and keep in a air tight container and freeze them for longer period. When you want to eat it,  without thawing just fry them directly in hot oil until golden colour.
