Mandarin Orange Pineapple Cookies橘子黄梨饼干

When  I saw this cute Mandarine orange cookies recipe, I decided to make it for this CNY. 

My elder son like it! 😊

Mandarin Orange Pineapple Cookies橘子黄梨饼干


Ingredients:

75 g salted butter softened

75 g icing sugar

1 egg yolk

20 ml mandarin orange juice

Zest of one mandarin orange

1 tsp orange extract (I omit this)

200 g plain flour

Orange food colouring

Green food colouring

Some cloves for  making stalk

Some pineapple paste for filling(Roll into 5g ball each)


Instructions:

  1. In a mixing bowl, cream together salted butter, and icing sugar until fluffy.
  2. Drizzle in mandarin orange juice and the zest.
  3. Add some orange extract.
  4. Add in egg yolk.
  5. Once it is well combined, stir in plain flour and knead until it turns into a dough.
  6. Portion out 20 grams of dough into a separate bowl.
  7. Stir in half a tablespoon of softened butter and some pandan pasteor green colouring. Transfer into a piping bag and set aside.
  8. For the rest of the dough, dye it with some orange food colouring and knead until the colour is even.
  9. Roll them into 10g balls. Then wrap in 5g pineapple paste balls.
  10. Preheat your oven to 150C degrees, fan-forced.
  11. Then insert a clove onto each ball.
  12. Pipe out the green paste you prepared earlier to mimic it as the leaves of the oranges.
  13. Bake it in the oven for about 20 to 25 minutes at 150C.
  14. Let it cool before transferring them to a container.
