Hup Tou Sou/ Walnut Cookies/ 核桃酥

At first I made the crispy texture hup tou sou, but hubby said he likes the melt in the mouth texture cookies. So, I made another batch of walnut cookies to meet his requirements!😅

Hup Tou Shou/ Walnut Cookies/ 核桃酥

Ingredients:

250g  plain flour

125g sugar

1/2 tsp baking powder

1/2 tsp alkaline water

1/2 tsp salt

20g Butter

150ml cooking oil

40g chopped walnuts

1 egg yolk for glazing (add in 1 tsp. water)


Method:


(1) Add all ingredients except butter and oil. Rub in butter with flour mixtyre till crumble. Slowly add in oil and mix till form a soft dough.

(2)  Weigh dough 10g each and roll into small round balls and place onto baking tray. 

(3)Use a chopstick / finger/ bottle cap to create a depression on the cookie. 

(4) Egg glaze the cookies and bake at 170C for about 16 - 20 mins or 150C fan fore for 20 minutes or until golden colour.

(5) Remove from oven and cool on wire rack.
