Brown Sugar Malay Cake/ Ma Lai Koh 红糖/黑糖马来糕

This Ma Lai Koh made with yeast has a fluffy and soft texture. The taste is similar to traditional Malay cake, also from the dim sum restaurant too, delicious!

This recipe is super easy to make and the bonus is without using electric mixer.😘

I made this cake for tomorrow night ~ pray to God of Heaven-Jade Emperor on the 8th night of Chinese New Year(Bai Tee kong).

这个食谱用酵母来制作的马来糕口感比较蓬松和软Q。它的味道就跟传统的马来糕相似以及和点心餐厅的马来糕类似好吃!

这个食谱非常容易制作,而且无需使用电动搅拌机即可做到.😘

我为明天晚上而做这个蛋糕,准备年初八晚拜天公~向玉皇大帝祈福,求保平安。







Brown Sugar Malay Cake / Ma Lai Koh 红糖/黑糖马来糕


Ingredients材料: 

3     Large eggs(A) 鸡蛋

160g  Evaporated milk 淡奶

3 tbsp  Pandan water  班兰汁 *

180g  All Purpose Flour 中筋面粉

160g   Dark brown sugar 红糖/黑糖  

1 tsp   Yeast 酵母

Dash of salt 少许盐 

1 tsp  Baking soda  苏打粉

1 tsp  Baking powder泡打粉

50g   Corn oi 玉米

Some Melon seeds 少许瓜子

*Mix 3tbsp water with cut pandan leaves and blend well.  Filter the pandan water.


Method:

1. Lightly beat the eggs, add evaporated milk and pandan water, stir well.

2. Add flour, brown sugar, yeast and salt, and stir well.

3. Leave to ferment for about 2 hours.

4. Prepare an 8“  bamboo steamer basket for steaming Ma lai koh and lined with greaseproof paper.

5. Before pouring into the container, take out 4 tablespoons of batter, add soda powder, baking powder and oil and mix well. Then pour into the batter and mix well.

6. Strain the batter twice before pour it into the container. Sprinkle some melon seeds on top.

7. After boiling, steam over medium-high heat for about 35 - 40 minutes.

8. After steaming, turn off the heat and carefully remove the lid to avoid the water drip on the cake.Take out the cake and let it cool for 2 minutes, then remove it from steamer basket and open the greeseproof papper, let it cool on a rack.


Notes:

  • It is best to steam the cake in a bamboo steamer basket.
  • The sweetness of the cake is just nice to my liking. You can add more sugar according to your preference!


制作过程:

1. 将鸡蛋打散,加入 淡奶和香兰汁搅拌均匀。

2. 加入面粉、红糖、酵母和盐,搅拌均匀。

3. 静止发酵2小时左右。

4. 准备蒸马拉糕的8“竹蒸笼,放隔油纸。

5. 倒入容器之前,先取出4汤匙的面糊,加入苏打粉,泡打粉 和油搅匀。再-倒入面糊里拌均匀。

6. 将面糊过滤两,才倒入蒸笼中。在上面撒些瓜子。

7. 水滚后用中大火蒸35 - 40 分钟左右。

8.  蒸好后,熄火,小心地取下拿开盖子,避免水滴落在蛋糕上。取出马拉糕待凉。然后将其从蒸笼中取出,打开烘培纸,使其在架子上冷却。


笔记:

  • 最好用竹蒸笼蒸蛋糕。
  • 蛋糕的甜度刚刚好。如果你喜欢吃甜一点,可以根据自己的喜好添加糖!
