Baked Glutinous Rice Cake/Baked Nian Gao香酥烤年糕

 As Chinese New Year is coming to end,  the first thing came up in my mind was this "Baked Nian Gao" to celebrate "Chap Goh Meh". This baked nian gao is truly a great alternative to celebrate Chinese New Year and it can be eaten as it.

Traditionally, the sweet rice cake, also known as the Chinese “New Year” cake or nian-gao, is steamed and then either eaten as is or dipped in an egg batter and pan fried. Thanks to the person who has been adapted it to be baked in an oven instead of a steamer and uses butter, milk, and eggs as additional ingredients. This is a wonderful resipe. I slightly modified the resipe and it turned out great!😍

Once you have mastered the base ingredients, you can add a bunch of other things into the rice cake to your liking... such as red beans or red bean paste, chocolate chips or chocolate powder, sesame seeds, nuts, dried fruits and et cetera.

This baked nian gao is super simple to make. Crusty top with soft and chewy middle, amazingly delicious! If you like to eat mochi, this baked nian gao will be yours favourite dessert too! The sweetness of the rice cakes in my recipe is neither sweet nor greasy, but I think it could be sweeter.

农历新年快要结束了,我想要做这个“烤年糕”来庆祝元宵节。这个烤年糕确实是可以代替蒸年糕的绝佳选择,因为可以直接食用呗!😊

传统上,将甜糯米糕(也称为“新年”糕或年糕)蒸熟,然后直接食用,或沾上鸡蛋糊中,然后煎炸。感谢某人调整食谱,并使用黄油,牛奶和鸡蛋作为附加成分后在烤箱中进行烘烤。改良版的年糕不是蒸锅中蒸了。很感谢分享此食谱的人。我略微修改了食谱,做出来的成果也很棒!😍

如果您掌握了基本成分后,您可以根据自己的喜好在年糕中添加一些其他东西。例如红豆或红豆沙、巧克力豆或巧克力粉、芝麻、坚果、干果等等。

这个香酥烤年糕的做法超简单。外脆内软,Q弹爽口!如果您喜欢吃麻糬,这款烤年糕也将会是您喜欢的甜点!我这食谱的年糕的甜度不甜,但吃起来不腻。不过,我觉得还可以再甜一点。






Baked  Glutinous Rice Cake/Baked Nian Gao香酥烤年糕


Baked Nian Gao Ingredients烤年糕材料:

2 large egg 大鸡蛋

280g Glutinous rice flour(sieved) 糯米粉 (过筛)

6g Baking powder无铝泡打粉 

320g Milk 牛奶 

80g Sugar 白砂糖 

70g Butter(Melted) 奶油 

1 tsp Vanilla essence香草精


Method:

1. Mix all the ingredients and stir well.

2. Prepared an 8" pan. Lined with parchment paper .

3. Pour batter into the pan.

4. Bake in preheated oven 180C for 40-45 minutes. Or bake at 180C for 20 mins, then turn to 160C bake for 25 mins. 

5. Remove from pan and let cool.


Notes:

  • The amount of sugar may increast to 100g-120g if you like it sweet.
  • They can be kept at room temperature for about 2 days.
  • Store the rest in the fridge in an air-tight container or wrap it up in cling wrap for about one week in the fridge.
  • Wrap it up nicely in a cling wrap and put it in a freezer bag. It can be kept frozen for up to 3 months. Simply thaw in the fridge before serving and then warm it up in the microwave or toaster oven/oven at 180C for 5-8 minutes until they are warm and back to its soft texture.


做法:

1. 预热烤箱180C

2. 准备一个8英寸的锅。内衬烘培纸。

3. 混合所有成分并充分搅拌均匀。

4. 将面糊倒入锅中。

5. 在180°C的预热烤箱中烘烤40-45分钟。或在180°C烘烤20分钟,然后转至160°C烘烤25-30分钟。

5. 取出并冷却。

 

笔记:

  • 如果您喜欢吃比较甜的话,糖的含量可以增加到100g-120g。(依照您自己的喜好增减糖的含量)
  • 它们可以在室温下保存约2天。
  • 将其余的年糕存放入密封容器中,或用保鲜膜包起来,在冰箱中放置约一周。
  • 用保鲜膜包裹好,然后放入冷冻袋中。可以冷冻保存长达3个月。食用前只需在冰箱中解冻,然后在微波炉或电烤箱/烤箱中于180C加热5-8分钟,直到它们变热并恢复其柔软为止
