There is a jar of sourdough starter discard in the fridge... so I used it for making prawn fritters. There is No sour taste and very delicious. 😋
This recipe yields prawn fritters which are crispy at the outside, yet fluffy on the inside without the overpowering flavour of prawns. Needless to say, the taste is absolutely amazing. 😘
The ingredients I used are "agak-agak" (is somewhat by feeling), so please estimate by yourself. 😅
Prawn Fritters
Ingredients:
600g medium prawns, remove shell and devein with tail intact.
1 small carrot, grated
1/4 portion of a midium cabbage. chopped
1/2 Yellow onion, chopped
5-6 stalks Spring onions, chopped
1-2 tbsps Fried shallots
600g sourdough discard
40g rice flour
1tsp baking powder
1/2 tsp pepper
1/2 tsp salt
1/2 cup or enough water
2tbsp oil
*Enough oil for frying
Method:
- Marinate prawns lightly with a dash of sesame oil, salt and pepper and leave aside for 30 minutes.
- Combine flour, rice flour, baking powder, pepper, salt, just enough water and oil to make a thick batter.
- Pour in seasoned prawns, chopped cabbages, grated carrots, yellow onion, fried shallots and chopped spring onions into batter. Scoop with a small laddle and fry in hot oil till fritters turn golden and crispy.
