Almond Cookies ( Melt-in-the-Mouth )杏仁酥

This is an eggless Almond cookies. There are very easy to make. The cookies are delicious and  Melt-in-the-Mouth. 


Almond Cookies ( Melt-in-the-Mouth )杏仁酥

Ingredients: 

300 g plain flour

1 tsp baking powder

1/2 tsp bicarbonate soda

1/2 tsp salt

1/2 tsp vanilla extract

120 g sugar

60 g finely ground almond

30 g crushed almonds  (Optional)

150 ml canola oil or any oil except olive oil


Instructions:

  1. In a bowl of plain flour, add baking powder, bicarbonate soda and salt, mix all the dry ingredients well.
  2. Sieve flour mixture into another bowl.
  3. Add sugar, add finely ground almond and pour canola oil. Mix thoroughly until everything is fully combined.
  4. Optional: If you like crunch in the cookies add 30g crushed almonds and mix well.
  5. Pinch off small portions of the dough. Roll each portions into a ball and arrange on a baking tray lined with parchment paper.
  6. Using a fork press gently and make marking on the dough ball. Make another marking across the first ones to get a criss-cross pattern.
  7. Bake at 180 degree C for about 15 to 20 mins or until golden brown.
  8. Remove cookies from tray and cool them on a cooling rack.
