This is an eggless Almond cookies. There are very easy to make. The cookies are delicious and Melt-in-the-Mouth.
Ingredients:
300 g plain flour
1 tsp baking powder
1/2 tsp bicarbonate soda
1/2 tsp salt
1/2 tsp vanilla extract
120 g sugar
60 g finely ground almond
30 g crushed almonds (Optional)
150 ml canola oil or any oil except olive oil
Instructions:
- In a bowl of plain flour, add baking powder, bicarbonate soda and salt, mix all the dry ingredients well.
- Sieve flour mixture into another bowl.
- Add sugar, add finely ground almond and pour canola oil. Mix thoroughly until everything is fully combined.
- Optional: If you like crunch in the cookies add 30g crushed almonds and mix well.
- Pinch off small portions of the dough. Roll each portions into a ball and arrange on a baking tray lined with parchment paper.
- Using a fork press gently and make marking on the dough ball. Make another marking across the first ones to get a criss-cross pattern.
- Bake at 180 degree C for about 15 to 20 mins or until golden brown.
- Remove cookies from tray and cool them on a cooling rack.
