Today's bake~~ Cranberry Cream Cheese Bread(Commercial yeast free).

The bread is soft and with the cream cheese and sweet and sour dried cranberries filling, it is so delicious !😋







Cranberry Cream Cheese Bread( Commercial yeast free)

Ingredients 材料 :Make 6 small loaves(可以做6个)

300g  Bread flour 高筋面粉

80g  Milk 鲜奶

110g Water 水

25g  Brown Sugar 红糖

120g  *Sourdough Discard 酸种酵母

25g  unsalted butter 奶油

3g  salt 盐巴


Filling part夹心部分: 

Creme cheese奶油奶酪 150g

Powdered sugar 糖粉 30g

Dried cranberry蔓越莓果干 40g

*2 Cheese slices 2片奶酪


Method;

1. Pour all ingredients except butter into the mixing bowl, and mix the ingredients at low speed.

2. Turn to high speed and knead until it forms a mass. Add softened 

 butter and continue kneading until a smooth dough is formed.

3. Put dough on the bench and lightly fold the dough into a ball.

4. Put dough back into a lightly greased mixing bowl, cover and let the dough rises to double its size ( It takes about 1- 2 hours).

5. Mix Cream cheese and powdered sugar, uae double boiling method and keep stirring until a smooth cream cheese paste is formed. Turn off heat and set aside. 

6. Pat the dough down on the bench and divide into 6 portions( 110g each dough), cover and rest for about 15 minutes. 

7. Shape dough~ Roll out into a rectangular shape, smear some cream cheese, sprinkle with dried cranberries and roll up.

8. Place on greased baking sheet or lined with parchement paper. Cover and final rise for 1-1.5 hours or until doubled its size.

9. Preheat oven to 200℃.

10. Spray some water on the bread, sprinkle flour, and cut 3 traces with a sharp knife.

11. Lower the oven temperature to 190℃ and bake for 18 to 20 minutes. Until golden color and bottom sounds hollow.

12. Remove from oven and let the bread completely cooled on rack.
