Christmas Chocolate Yule Log Cake

This easy yule log cake recipe is the perfect dessert for the Christmas season. It not only looks amazing, it's moist and delicious too.

A Yule Log Cake, also known as a Bûche de Noël, is a cake made based on that old tradition. Buche de Noel or yule log cake is  a chocolate sponge cake roll that’s filled with cream and covered with chocolate ganache and made to look like a log.

Christmas Chocolate Yule Log Cake

Ingredients:

4       Egg yolks

30g   Sun flower oil ( Flavour free oil)

80g   Milk

16g   Unsweetened cocoa powder

80g   Cake flour 

4       Egg whites

60g   Sugar 


Whipped Cream Filling

Ingredients:

Light cream 120g

Sugar 30g

*~ Add light cream to sugar and beat to 8-9% soft peak formed.


Chocolate ganache

Ingredients:

Dark Chocolate 80g

Light cream 100g

Unsalted Butter 10g

Steps:

1) Heat the light cream slightly and turn off the heat.

2) Add butter and chocolate and stir until dissolved.

3) Put in the refrigerator for 10 to 15 minutes (Do not leave in the fridge for too long)


Method:

  1. Preheat the oven at 180°C
  2. Mix egg yolk and oil and mix well.
  3. Add milk and mix well.
  4. Add in sieve cocoa powder and cake flour, mix well.
  5. Beat egg whites with sugar (add in three portions), beat until soft peak formed.
  6. Add chocolate batter to meringue and mix well.
  7. Pour into the cake tray and tap a few times.
  8. Bake for 15-18 minutes.
  9. Let cool, slightly warm.
  10. Apply whipped cream, roll it up and put it in the refrigerator for half an hour.
  11. Cut out the trunk, smear it with chocolate ganache, and use a fork to make a tree pattern.
  12. Sprinkle with moisture-proof icing to finish the final touch.


Notes:

  • Don't overmix cake batter– resulting in a more dense, chewy, rubbery texture.
  • I used 27x27cm tray.
