Curry powder sourdough

This Curry powder sourdough taste good. The  aroma of curry is so nice and added turmeric powder makes the colors more vibrant!😘







Curry powder sourdough

Ingredients:

180g Pan syokunin bread flour

30g  Prima French bread flour

170g Water

42g Levain

4g Himalaya salt

6g Babas meat curry powder, 1g tumeric  powder


Method:

  • Stir in water, levain, salt, flour,  curry powder & tumeric  powder ( 2 hrs Autolyse)
  • 2x Strech and Fold, 25 mins interval. 
  • 1x Light bench fold - rest 1 hr 
  • 3x Coil Fold - 30 mins interval - rest 1 hr
  • Cold Retard for 6 hrs. 
  • Room temperature 1 hr
  • Shapping -  rest 1 hr
  • freeze 1/2 hr
  • Preheat oven at 250℃
  • Score & Bake in Dutch Oven with lid on for 20 mins; remove the lid and continue baking for 23 minutes at 210℃.
