Assorted Bread四种口味面包

After I saw a youtube of making assorted bread, I decided to make these yummy assorted bread by using sourdough starter. The result is superb! The breads are soft and fluffy. Most importanyly, they still remain soft after six days. 😊

Assorted Bread 四种口味面包

Ingredients材料 :

300g  Bread flour 高筋面粉

80g  Milk 鲜奶

110g Water 水

25g  Brown Sugar 红糖

120g  *Sourdough Discard 酸种酵母

30g  unsalted butter 奶油

5g  salt 盐巴

Filling馅料:Cheese slice起司片适, Chocolate chips巧克力豆, Purple sweet potato paste, Chopped scallion切碎的青葱, Mayonese 蛋黄酱

Egg wash: 1/2 egg mix with a tsp of milk or water

Making main dough: 

The night before baking:

  1. In a big mixing bowl, add in all ingredients except butter and knead well.
  2. Knead dough until it comes together then add the butter and knead dough until it smooth and elastic.
  3. Put dough on the bench and lightly fold the dough into a ball.
  4. Put dough back into a lightly greased mixing bowl, cover and let the dough rest about 1- 2 hours.
  5. Keep the dough in the fridge overnight about 8-10 hours.


Next day:

  1. Leave the dough in room temperature for 30 minutes or 1 hour.
  2. Pat the dough down on the bench and divide into 11 portions ( 50g each),  cover and rest for about 15 minutes. 
  3. Shape dough~ any shape you preferred. Wrap in Purple sweet potato paste, cheese slice and chocolate chips respectively.
  4. Place on a lined parchement paper baking sheet. Cover and final rise for 1-1.5 hours or until doubled its size.
  5. Preheat oven to 200℃
  6. Before sending to oven,  brush some egg wash and spread some mayo on selected dough for making savory scallion bun(sprinkle chopped *scallion on top). * Mix the chopped scallion with salt and oil and mix well.
  7. Bake for 15 to 18 minutes or until golden color.

Tips:

  • Place the dough in the oven with a cup of hot water. Let it rise for 1 hour or double in size. DO NOT turn on the oven.
  • You can keep them at room temperature for 3 days . Or Store them in the fridge, heat them up in microwave or small oven before you eat.
  • They taste the same and remain soft after 5 days. Remember to re-heat the bread before eating.
