I am craving for a sweet treat especially after meal... Since I still have some leftover coconut milk is sitting in the fridge, so I started to make this easy, moist and delicious (of course ) cake.😘
Coconut Cake 椰子蛋糕
Ingredients材料:
3 Eggs 鸡蛋
1/2 tsp vanilla essense 香草精
160g Sugar 糖
120g Veggie Oil 蔬菜油
100g Milk 牛奶
90g thick coconut milk(santan) 椰浆
200g Cake Flour 低筋面粉
3 tsp Baking Powder 发粉
1/2 cup Desicated Coconut 椰子
Pinch of salt
Cocolate chips to Sprinkle (Optional)
Coconut to Sprinkle(after baked)(Optional)
~For the Coconut to stick better to cake top.
Use 1 Tsp Sugar/1 Tsp Water mixture brushed on top the cake.
Method:
1. Preheat the oven to 180°C. Greased and lined the 9"pan with parchment paper.
2. Beat the sugar, eggs, oil and vanilla essence till combine.
4. Add in coconut milk, milk and salt into the egg mixture and beat well.
3. When the mixture is well blended, whisk in the dry ingredients(flour, baking powder and desiccated coconut) until incorporated. Pour the batter into the prepared pan. Sprinkle some chocolate chips on top(optional).
6. Bake the cake for 45 to 50 minutes, or until the top is golden and the sides start to pull away from the sides of the pan; a toothpick inserted into the center should come out clean.
7. Let the cake cool in the pan for 10 minutes, then unmold the cake. Let the cake cool completely on the cooling rack.
