Sourdough Purple Sweet Potato Challah

Baked sandwich loaf again! 😊

Challah~braided bread. Braiding a challah whether it's three strand, four strand, or even six strand is truly the only part in the entire recipe that's slightly challenging.

Sourdough Purple Sweet Potato Challah

Levain

50g starter + 50g flour + 50g water

Ingredients:

265g bread flour

8g purple sweet potato powder

25g sugar

110g water

5g salt

150g levain

25g softened butter

Method:

  1. First build the levain and leave it to rise to peak.
  2. Add the levain to all the ingredients (except butter) and knead until it comes together in a ball.
  3. Add the butter slowly and continue kneading the dough until it is smooth, shiny and elastic.
  4. Divide the dough into three balls, the small portion mix with purple sweet potato powder, knead till incorporated, round it and rest for 10mins.
  5. Each dough divide into three balls. Roll into a long strip. Plaited it.
