Sourdough Purple Sweet Potato Sandwich Loaf

Easy Homemade Sourdough Bread, soft, fluffy and delicious Sandwich Bread. This time I used water instead of milk and added some purple sweet potato powder to make some purple colour into bread.  😍

According to current nutritional thinking, white bread is digested too fast, spikes blood sugar levels and is linked to obesity. In short, it's the enemy of healthy eaters.😧

The purple bread is rich in cancer-fighting antioxidants, digested 20% slower than regular white bread, and its play a role in controlling obesity and diabetes, as they can inhibit digestive enzymes and reduce glucose levels.😘

Anthocyanin is a natural pigment that occurs in fruits and vegetables such as grapes, blueberries, and sweet potatoes, and is responsible for their vibrant hue.

What's more the purple colour enhances the bread's look too! When looking at the color... to drool over...😋






Sourdough Purple Sweet Potato Sandwich Loaf

Levain 

50g starter + 50g flour + 50g water + 25g sugar


Ingredients:

265g bread flour

1 large egg

8g purple sweet potato powder

25g sugar

105g water

5g salt

150g levain (sweet liquid starter from above, use at peak)

25g softened butter

20x10x10cm Pullman loaf tin

Method:

  1. First build the levain and leave it to rise to peak.
  2. Add the levain to all the ingredients (except butter) and knead until it comes together in a ball.  
  3. Add the butter slowly and continue kneading the dough until it is smooth, shiny and elastic.
  4. Divide the dough into two(372g +252g), the small portion mix with purple sweet potato powder, knead till incorporated, round it and rest for 10mins. 
  5. Each dough divide into three balls. Flatten the plain dough and stack the purple dough on top, roll out and swiss roll up. 
  6. Place in a greased Pullman tin. Cover with cling wrap and proof until the dough fills 90% of the loaf tin (about 7-8hr at 28-30C). 
  7. Bake the bread in the preheated oven at 180°C for 35 to 40 minutes.
