Sourdough milk sandwich bread天然酵母牛奶三明治面包

Since I had sourdough starter in the fridge, so I decided to make this Sourdough milk sandwich bread. The bread is very soft and fluffy. I simply fall in love with this bread. I will definitely make this bread again...😘

由于冰箱里还有酵母发酵剂,所以我决定制作这种天然酵母牛奶三明治面包。 面包很松软。 哈,就这样爱上了这种面包。 我一定会再做这面包...真好吃!😏







▶Sourdough milk sandwich bread
strong flour(bread flour) 320g
milk(room temp) 180g
water 20g
sourdough starter 66g
salt 4g
sugar 40g
dry yeast 3g
unsalted butter 30g

▶Sourdough milk sandwich bread baking

1. Mix dry yeast, water and milk in room temperature
2. Put all ingrediants in the mixing bowl and low speed for 3min and mid speed for 5 min
3. Put the butter in the mixer and mid speed for 5min / 5min break  / mid speed for 3 min
4. 1st fermentation: 2hrs
5. Shaping
6. 2nd fermentation: 40-50min
7. Egg wash: egg yolk 1+milk 10g + salt 1g
8. Bake at 180℃ 30-40minutes(Pls adjust the time and twmperature according to your oven)

做法:
1.在室温下混合干酵母,水和牛奶。
2.将所有成分放入搅拌碗中,低速搅拌3分钟,中速搅拌5分钟。
3.将黄油放入搅拌机,中速搅拌5分钟/ 5分钟休息,再中速搅拌3分钟。
4.第一次发酵:2小时
5.塑形
6.第二次发酵:40-50min
7.鸡蛋液:蛋黄1+牛奶10g +盐1g
8. 180度烘烤30-40分钟(请根据您的烤箱调整时间和温度)
