Kuih Ketayap/Kuih Dadar 椰丝卷

Kueh Dadar (Kuih Ketayap) is a popular dessert among the many Nyonya kueh-muih in Malaysia. It consists of luscious gula melaka grated coconut wrapped in a fragrant pandan pancake. 😊






Kuih Ketayap/Kuih Dadar 椰丝卷

Ingredients for batter (面糊料):
180g plain flour (普通面粉)
1/4 tsp salt (盐)
1 tbsp caster sugar (细砂糖)
4 pandan leaves, blended with 360ml water (4片班兰叶,加360毫升水打成汁)
1 egg (鸡蛋)
1 tbsp corn oil (玉米油)

Filling (馅料):
200g white grated coconut (白椰丝)
60g palm sugar (椰糖)
40g caster sugar (细砂糖)
50ml water (水)
1 pandan leaf, knotted (1片班兰叶,打结)
1/4 tsp salt (盐)

Instructions: 
PANDAN PANCAKE WRAPPER:
-Put pandan leaves (cut into small pieces) into a blender
-Pour in  water into blender
-Blend pandan leaves into a fine pulp
-Sieve out pandan juice by squeezing the pandan pulp dry
-Sieve plain flour
-Add  salt
-Pour in the pandan juice into flour nd mix well
-Add  cooking oil
-Add 1 large egg and mix well
- Rest for 30 minutes
-Heat up a non-stick pan over low heat
-Pour in a ladle of pandan batter
-Swirl the batter around to distribute it evenly
-Cook until the batter firms up
-Shake the pan until the pancake comes loose
-Turn the other side and cook for 15 seconds or till cooked

Filling(Sweetened Grated Coconut):
-Cut  gula melaka (palm sugar) block into small pieces
-Cut pandan leaves 
-Add water into pan and pandan leaves
-Add the cut gula melaka pieces and sugar
-Stir gula melaka ,sugar and water over low heat until all sugar melts
-Add  salt
-Add  grated coconut into pan
-Mix grated coconut with the sugar syrap.
-Cook thoroughly until all the grated coconut is coated with the sugar syrup
-Turn off the heat and remove pandan leaves, set aside.

FINAL STEPS:
-Place a heaped tbsp or 2 tbsp of sweetened grated coconut onto pancake
-Roll it up tightly into a spring roll shape
