Flourless Chocolate Cake/ Keto Chocolate Cake


Ingredients:
200g   Dark Chocolate  
100g   Unsalted butter
1 tsp   Instant coffee Powder
1/2 cup  Double cream or Milk
75g     Brown sugar
4 Eggs, Separated

Method:
1. Preheat the oven to 180°C. Grease and line a 8-inch springform pan with parchment paper. 

2. Melt the chocolate and butter together in a double boiler or in a microwave-safe bowl, until the chocolate is almost completely melted. Remove from heat , add in instant coffee powder and stir until smooth and totally melted. Stir in the sugar and milk, mix well.

3. Add the eggs, one at a time, fully combining between each addition. After all the eggs are added, continue to stir until the batter becomes thick and glossy. Stir in 1 tsp vanilla extract or almond extract if you desire(optional).

4. Using an electric mixer, beat egg whites and sugar until soft peaks form. 

5. Add 1/3 meringue into chocolate mixture. Then add in remaining meringue and mix well.

6. Pour the batter into the prepared pan. Bake 40-45 minutes, until the center no longer jiggles... Don't  overbake it. 

7.  Allow the cake to cool completely before unmold. Dust with powdered sugar and cutting it into slices, then serve.

无面粉巧克力蛋糕

材料:
200克    黑巧克力
100克   无盐黄油
1茶匙   速溶咖啡粉
1/2杯    奶油或牛奶
75克      红糖
4个        鸡蛋,蛋黄和蛋白分开

方法:
1.将烤箱预热至180°C。在一个8英寸的可以脱模烤盘上抹油并衬上烘培纸。

2.用双锅或微波炉,将巧克力和黄油融化在一起,直到巧克力几乎完全融化。从火上移开,加入速溶咖啡粉,搅拌至光滑完全融化。再加入糖和牛奶搅拌均匀。

3.逐渐加入蛋黄,每次添加蛋黄必须完全搅拌均匀再加入蛋黄,搅拌直至面糊变浓稠,光滑。如果需要,加入1茶匙香草精或杏仁精搅拌。

4.使用电动搅拌机将蛋清和糖打直至形成软峰状态。

5.将1/3蛋白霜加入巧克力混合物。然后加入剩余的蛋白霜并混合均匀。

6.将面糊倒入准备好的烤盘中。烘烤40-45分钟,直到中心不再抖动...不要过度烘烤了。


7.让蛋糕完全冷却,脱模,然后切片。用糖粉撒粉即可食用。
