Theese Cheese Tarts ~~ Sweet and salty, crunchy and creamy, all in one comforting bite, so addictive !😋
Baked Cheese Tart (Yields 10 tarts)
Ingredients:
Tart shell:
100g Unsalted butter
50g Sugar
1g Salt
36g Egg Yolk
180g Cake flour
20g Almond powder
Cheese Filling:
200ml Heavy cream
200g Cream cheese
40g Sugar
10g Corn starch
20g Powdered skim milk
55g Egg (one large egg)
50g Unsalted butter
6ml Vanilla extract
Brush on top of filling:
15g Milk
15g Egg Yolk
Method:
Make Tart shells:
- Cream butter, sugar and salt.
- Add yolk and mix until resistance is reached.
- Sift the powdered flour and almond powder and mix it gently with a spatula.
- Cling-wrap the dough and chill in refrigerator until firm.
- Roll dough out to 4mm thickness, then cut out circles with a 4” round cutter
- Line tart moulds with pastry circles, then prick pastry bottoms and bake in preheated oven at 180C for 12-15 minutes.
Make cream cheese filling:
- Mix cream cheese and sugar first, stir well. Then mix in starch and skim milk powder, mix well. Add in eggs and mix well.
- Heat fresh cream. Remove from heat, whisk in cream cheese mixtures. Stir well until smooth. Return pot to stove and continue stirring over low heat until mixture thickens enough to coat the back of a spoon.
- Remove from heat and stir in butter and vanilla extract, mix well.
- When it's hot, pour it in a bowl and cover with clingwrap tightly. Let it cool for 30 minutes and move to refrigerator.
- When it's cooled, fill in a piping bag and pipe into cooled tart shells.
- Gently brush beaten egg yolk over cheese filling and then bake at 200C for 8-10 min until the surface of the filling forms a skin.
- Cool slightly and enjoy warm!
Note:
The cheese tart can be eaten warm or cold, they are both equally delicious!
