YouTiao油条(酵母版油条配方 )

油条是很多人喜爱的早餐和午茶点心,制作起来看似简单,但是想要炸出象外面卖的口感确难倒了很多人。😅

上一次我是用泡打粉和苏打粉制作油条。而这一次我想尝试用酵母制作,无添加泡打粉和苏打粉。很明显的,使用泡打粉和苏打粉,炸出来的油条气孔也会更大和更蓬松一些。也许,下一次我再做油条时还是使用泡打粉和苏打粉吧!😉

这个油条冷却后,却有点硬了,口感没那么好,不过再把它放进烤箱热一热,油条表皮又脆脆了!

Youtiao is one of the most popular breakfasts and afternoon tea snacks. It seems simple to make, but in fact, it's very difficult to make it taste like those selling youtiao ...😅

The last time I used baking powder and baking soda to make youtiao. This time, I want to try using yeast, without adding baking powder and baking soda. Obviously, using baking powder and baking soda powder, the youtiao will have bigger pores and more fluffier. Maybe, the next time I make youtiao, I will use baking powder and soda powder instead yeast!😉

The youtiao are a bit hard after cooling, but after reheat them in the oven, the youtiao are crispy again!



The dough is too soft 👆 and a bit difficult to handle it. I think I've failed! Hahaha...😅


油条(酵母版油条配方 )

Ingredients:
All-purpose flour  中筋面粉2 cup(340g)
Water 室温水 3/4 cup(150g)
Dry yeast  干酵母1 tsp(4g)
Salt 盐   1 tsp (3g)
Egg  鸡蛋1(50g左右)
Oil  油  适量

Instructions:

1. Mix all ingredients and knead till form a soft dough.

2. Brush some oil on the dough, then wrap with cling wrap and put it in the refrigerator to chill for 8 hours or overnight.

3. Next day morning, take out the dough. 

4. Lightly dust the work surface with flour, then roll out the dough.

5. Cut into strips and stack up one piece on top of the other, gently press in the centre with a chopstick.

6. Pull the dough into long strip before put into oil for frying. Deep-fry at medium high heat until golden brown.

做法:
1.混合所有成分并揉成面团。

2.在面团上抹上一些油,然后用保鲜膜包好并将其放入冰箱冷藏松弛8个小时左右或隔夜。

3.第二天早上,取出面团。

4. 将工作表面轻轻撒上面粉,然后面团 擀开。

5.切成条状,然后将一片堆叠到另一片上,用筷子在中央轻轻按一下。

6.将面团拉成长条状,然后放入油中油炸。用中高温炸至金黄色。
