Pecan Banana Butter Cake 碧根果香蕉奶油蛋糕

This Banana cake, aka banana bread is super moist and easy to make. They’re delicious and lovely with a cup of coffee or tea.

香蕉沒吃完,怕放到快爛掉了可惜. 所以就索性把香蕉用掉,做了这个松软湿嫩的蛋糕。😘

Pecan Banana Butter Cake 碧根果香蕉奶油蛋糕

Ingredients :
150g  Butter(牛油)
100g  Brown sugar (黄糖)
50g    White sugar (白糖)
1/2 tsp  Salt (盐)
2    Eggs(鸡蛋)
280g  Banana, mashed (香蕉压成泥)
280g  All purpose flour(普通面粉)
1/2  tsp  Baking soda(苏打粉)
1 tsp  Baking powder (发粉)
1 tsp  Ground cinnamon (肉桂粉)
100ml  Milk(牛奶)
50g (1/2 cup)  Chopped Pecan (碧根果)( Keep some pecans to sprinkle over the batter)

Method :
(1) Preheat oven to 180℃. Line a loaf tin 9" x 3"  with parchment paper and grease with butter.

(2) Sieve the cake flour, baking powder, and ground cinnamon  together.

(3) Beat sugar, salt and butter in a mixing bowl till creamy.

(4) Add in eggs gradually and beat well.

(5) Add in mashed banana, baking soda and beat well.

(6) Gradually add dry ingredients and alternaly with milk to wet ingredients until just combined.  

(7) Fold in chopped Pecans. 

(8) Pour into a loaf tin, sprinkle some pecans on top the batter and bake at 180°C for about 60 mins or till cooked. Stand cake in tin for at least 5 to 10 mins. before unmoulding onto a cooling rack.
