Luo Han Guo and Snow fungus Dessert 罗汉果银耳龙眼红枣汤

Sweet Chinese-style soup or Tong sui made with Luo Han Guo, snow fungus, dried longan, red dates, lotus seeds, dried lily bulps and sweetened with rock sugar is often served as light dessert at the end of the meal.😋
This snow fungus dessert soup is just one example of tong sui. 😉
Time to boost up some collagen, yes, we need some collagen. 😄 The collagen content in snow fungus is believed to be comparable to those of bird’s nest but not nearly as expensive as bird’s nest.😘

Luo Han Guo and Snow fungus Dessert 罗汉果银耳龙眼红枣汤

Ingredients
2 Luo han guo, washed and  lightly crushed it
Half bowl dried longan, washed
1 large piece snow fungus, soaked
8-10 red dates, Rinsed
2  Honey dates, Rinsed 
Half bowl Dried Lily bulps, soaked
Half bowl Dried Lotus Seeds, soaked
5-6 Pandan Leaves, washed and knotted
2.5 litter water
Rock Sugar or brown sugar to taste

Method: 
1.Soak snow fungus in water for 30 minutes till soft. Change the water several times. Trim and discard the hard yellow ends, tear snow fungus into smaller pieces. 

2. Soak dried longan in water for 5 minutes to remove dirt and impurities. Rinsed. 

3. Soak dried Lily bulps for 5 minutes and  rinsed.

4. Soak dried Lotus seeds in hot water for 30 minutes, Drain, rinse and remove the green sprout from each seeds and set aside.

5. Bring 2.5 litre water to boil and add all ingredients( except the snow fungus and lily bulps). Cook covered, over low heat for about 30 minutes. Then add in snow fungus and lily bulps, continue to cook for 30 minutes.

6. Add in rock sugar or brown sugar to taste. Boil for another 10 minutes. Turn off the heat and serve hot or chilled. Enjoy!
