Fried sesame balls 煎堆/芝麻球

Jian Dui or Fried Sesame Balls, a delicious Chinese dessert  is popular in all Dim Sum Central. 

Jian Dui or Fried Sesame Balls are made from glutinous rice flour. The pastry is coated with sesame seeds on the outside with crispy and chewy texture. Inside the pastry is a large hollow, caused by the expansion of the dough.

The hollow fried pastry can be filled with lotus paste, red bean paste, peanut, sheredded coconut or other fillings. 

Since I ran out of White sesame seeds, so I used Black sesame seeds for the rest of the dough.

Fried sesame balls 煎堆/芝麻球

Ingredients:(16 sesame balls)材料(16个煎堆)

Glutinous rice flour 糯米粉120g 
Wheat starch 澄面粉  1/2 Tbsp 
Hot water 水 125g  
Sugar 糖 50g  
Glutinous rice flour 糯米粉30g (Second addition)
Oil 油  1 Tbsp
Sesame seeds for coating芝麻适量

Filling馅料: ( Any filling as you prefered)
Low sugar red bean paste低糖红豆沙

Method:
1. Mix together 120g glutinous rice flour and 1/2 Tbsp wheat starch.
2. Dissolve the sugar with hot water or bring water with sugar to a boil.
3. Pour hot sugar syrup into dry ingredients and stir until it comes together. 
4. Add in 30g glutinous rice flour and knead the dough until smooth. (please adjust the amount until your rice ball is not sticky to your hand)
5. Cover the dough and rest for 30 minutes.
6. Prepare the red bean fillings. Divide into 16 balls(14g each)
7. Divide the dough into 16 pieces ( 20g each) .
8. Wrap in the filling and gently round it.
9. Coat generously with sesame seeds, press gently so that sesame seeds can stick firmly on the surface.
10. Heat the oil, put in a few sesame balls and fry. Use medium-low heat to avoid burning.
11. Stir and gently press down while frying, sesame balls will expand in size. 
12. Deep fried to golden brown.

Tips:
1. Avoid over kneading the dough or the texture will get tough. 
2. If the dough is a little cracked or too dry then add in water 1 teaspoon at a time until you get it the right consistency. The dough should be smooth after kneading and not too wet. If it is too wet, add 1 teaspoon Glutinous rice flour at a time until it becomes the right consistency.
3. After coated with white sesame seeds, press gently so that the sesame seeds will not fall off easily when fried.
4.During frying,  gently press sesame balls until the balls expand, that's the secret to get a crispy crust will form around the chewy and hollow center.

做法:
1.将120克糯米粉和1/2汤匙小麦淀粉混合在一起。
2.将热水倒入糖中,搅拌至糖溶解。
3.将热糖浆倒入粉类中,搅拌直至混合在一起。
4.加入30克糯米粉,搅拌成团后拌入1汤匙油,将粉团揉成光滑。(根据的粉团情况,调整干粉的份量,揉成一个不粘手的粉团。可以适当多加糯米粉)
5.盖上粉团,静置30分钟。
6.准备红豆馅。分成16个滚圆(大约8克)
7.将粉团分成16个(每个大约20克)。
8.包好馅料,然后轻轻地搓圆。
9. 裹上一层白芝麻后,用手稍微压实,使芝麻牢固地粘在表面上。
10.加热油,放入几个芝麻球炸。用中火边炸边翻动让它均匀受热。
11.煎炸时轻轻搅拌,芝麻球会膨胀。
12.炸至金黄色后捞起来。

提示:
1.避免过度揉粉团,否则质地会变硬。
2.如果粉团有点干裂或太干,则每次加入1茶匙水,直到达到合适的稠度为止。揉捏后的面团应该光滑并且不要太湿。如果太湿,每次加入1茶匙糯米粉,直到达到合适的稠度为止。
3.裹上一层白芝麻后,用手稍微压实,油炸时芝麻就不容易脱落。
4.在煎炸过程中,轻轻按压芝麻球直至其膨胀,这样做出来的煎堆会大一些,外层酥脆冷卻后不會塌掉(洩氣)的秘诀。
