因为行动管制令(MCO),还是少出门为妙,在家里做面包给家人吃。现在非常时期,面包短缺,幸好自己会做面包,免了这个问题!
Tangzhong Bread Loaf 烫面吐司
Ingredient材料:
Tangzhong汤种:
Bread Flour高筋面粉 20克
Water水 100克
Bread Dough主面团:
Bread Flour 高筋面粉 260克
Sugar 细砂糖 15克
Milk Powder 奶粉 25克
Water 水 90克
Instant Dry Yeast 酵母 4克
Salt 盐 3克
Butter 黄油 30克
Method:
Method:
1. Make the water roux: Cooking 20g bread flour and 100g water till form a paste and remove from heat, set aside and cool down.
2. Activate the yeast with water.
3. Combine flour, sugar, salt, TangZhong, yeast mixture and butter in a mixer and knead for about 5 minutes.
4. Rest the dough for 15 minutes .
5. Continue knead the dough for 10-15 minutes, turn off mixer. Cover the bowl with a plastic wrap. Let it rise for 1 hr in a warm place.
6. Divide dough by 3. Shape each piece into a ball and rest for 15 minutes.
7. Take a ball, flatten into a rectangle , roll the rectangle up, and place it seam side down onto a greased bread pan dish. Do this with the rest of the two balls.
8. Cover the bowl with a plastic wrap. Let it rise for second proofing 1 hr in a warm place.
9. Preheat oven at 180°C. Bake for 30 -35 minutes or until golden.
10. Brush to the tops with 1 tbsp of melted butter(optional), it make your bread shiny and delicious and yummy.
11. Cool on a rack.

1.汤种:将20克面包粉和100克水放进锅里,不停搅拌煮到形成糊状并从火上移开,放在一旁冷却。
2.酵母和水搅拌一起,搁置一旁。
3.在搅拌机中混合面粉,糖,盐,汤种,酵母混合物和黄油,然后揉约5分钟。
4.将面团静置15分钟。
5.继续揉面团10-15分钟,关闭搅拌机。用保鲜膜盖住碗。让它在温暖的地方升起1小时。
6.将面团分割3份。将每块滚成小球,静置15分钟。
7.取一个球,压扁成一个矩形,将其向上滚动,然后将其接缝的一面朝下放置在已涂抹油的面包盘上。其余两个面团也如此操作。
8.用保鲜膜盖住。让它在温暖的地方发酵第二次约1小时。
9.将烤箱预热至180°C。烘烤30 -35分钟或直到表面金黄。
10.用1汤匙融化的黄油(选择性)刷,面包顶部,使面包有光泽,美味可口。
11.让其在架上冷却。
