Mandarin Orange Cotton Cake 年柑海棉蛋糕

There were some mandarin oranges sitting in the fridge... nobody wants to eat it, so I decided to use them to make this soft like cotton cake.  This cake is super fluffy and spongy ... delicious! 😘






Mandarin Orange Cotton Cake 年柑海棉蛋糕


Ingredients:
4 Egg Yolk
35g Oil
55g Mandarin Orange Juice
55g Cake Flour
1/4tsp Salt 

4 Egg Whites
40g Sugar

Method:
1. Preheat Oven to 150°C. 
2. Slightly whisk egg yolks and add in oil & Mandarin orange juice and mix well.
3. Add in sifted flour and salt into the batter, mix well.
4. Beat egg whites until foamy, add in sugar gradually and beat it till firm peaks.
5. Fold meringue into the egg mixtures in three portions.
6. Pour into 7" (18cm) square cake pan lined with baking paper.
7. Tab the pan to remove air bubbles.
8. Pour hot water into larger pan.
9. Bake in the bottom second rack at 150°C for 60 minutes with Water bath method.
10. Once it done, remove from oven and let it cool completely. Remove the baking papper. Enjoy the cake!
