I baked this carrot cake to share with my beloved family and my best friends on 8th day of CNY. I'm grateful that everyone love to eat this carrot cake. They brought back home with some carrot cake too. 😊
Carrot Cake Recipe 红萝卜蛋糕
Ingredient 材料 :

Ingredient 材料 :

350g Grated carrot 红萝卜丝
280g Plain flour 普通面粉
1 tsp Baking soda 食用苏打粉
1 tsp Baking powder 泡打粉
250g Corn oil 玉米油
130g Caster sugar 细砂糖
130g Brown sugar 黄糖
1 tsp Salt 盐
1 tsp Cinnamon powder 肉桂粉
1/2 tsp Nutmeg powder
280g Plain flour 普通面粉
1 tsp Baking soda 食用苏打粉
1 tsp Baking powder 泡打粉
250g Corn oil 玉米油

1/2 tsp Nutmeg powder
1 tsp Vanilla essence香草香精
4 pcs Eggs 鸡蛋
Cream Cheese Frosting 奶油奶酪霜:
110g Unsalted butter (softed)软化无盐黄油
250g Cream cheese (softed) 软化奶油奶酪
200g Icing sugar (powdered sugar) 糖粉
1 Tbsp Lemon juice 柠檬汁
Directions:

110g Unsalted butter (softed)软化无盐黄油
250g Cream cheese (softed) 软化奶油奶酪
200g Icing sugar (powdered sugar) 糖粉
1 Tbsp Lemon juice 柠檬汁
Directions:
For the cake:
1. Preheat the oven to 180C. Grease two 8" cake pans.
2. Sift the flour, baking powder, baking soda, and cinnamon powder together in a bowl.
3. In a large bowl whisk together the oil, sugar, eggs, vanilla, and beat well. Then mix in the sifted flour mixture into the batter.
4. Finally, add in the grated carrots, roasted walnut and raisins and mix until incorporated.
5. Pour the batter into the pans with equal portion. I used two 8" pan. Place the pans in the middle rack of the oven and bake for about 30 to 35 mins and a toothpick inserted in the center comes out clean. Cool the cake before frost the cake.
For the frosting:
1. Cream the cream cheese and butter together.
2. Slowly sift in the icing sugar, and continue beating until fully incorporated and smooth. Add in lemon juice and beat well.
Assemble the Cake:
1. Slice the cake into 4 equal layers.
2. Place a layer of cake on the cake board. Apply some cream cheese frosting onto it and spread evently.
3. Place another layer of cake onto the first layer cake and apply some cream cheese frosting onto it and spread evently.
4. Repeat the same method until all layer of cakes are done.
5. Decorate cake as desired.
