Oatmeal Walnut butterscoth chip Cookies

I'm trying to use up my leftover rolled oats... Adding oatmeal/rolled oats in cookies will add texture, taste and nutritional value to your recipe. These cookies are soft in the middle and slightly crisp on the edges.They're great for breakfast or afternoon snacks.

You can make these ahead of time and store them in an airtight container, but they're best served warm.




Oatmeal Walnut butterscoth chip Cookies
Ingredients
1/2 cup granulated sugar 
1/3 cup packed dark brown sugar 
1/4 cup butter, softened 
1 teaspoon vanilla extract 
1 large egg 
3/4 cup all-purpose flour 
1 cup regular oats 
1/4 teaspoon salt 
1/4 cup butterscoth chips 
1/4 cup chopped toasted walnuts

Method:
1. Preheat oven to 180C(350º).

2. Place first 5 ingredients in a large bowl. Beat with a mixer at medium speed until well blended.  

3. Add flour, oats, and salt to egg mixture, beat well. Stir in butterscoth chips and walnuts.

4. Drop by level tablespoons, 1 1/2 inches apart, onto a baking sheet lined with parchment paper. 

5. Bake in preheated oven at 180C(350º) for 12 minutes or until lightly browned. 

6. Remove from oven, let stand 2 minutes. Remove cookies from baking sheet, serve warm.


Tips:
1. You can add 1 1/2 tsps cinnamon with the flour mixture. It would be a little different from typical oatmeal cookies.
2. I found it a bit too sweet. You may reduced the granulated sugar to 1/3 cup and add 1/2 tsp baking soda and these would be worked out great. 
3. Raisins, Dried Cranberries or Chocolate chips can be substituted for Butterscoch chips.
4. Any nutty flavor can be substituted for walnut.
