Coffee Chocolate Chip walnut Cookies 咖啡巧克力粒核桃曲奇

These coffee chocolate chip cookies are scrumptious. Seriously.The coffee and chocolate flavors in these cookies bind together perfectly. None of them are overwhelming.  Actually, next time I make them – I will add more coffee.😘




Coffee Chocolate Chip walnut Cookies 咖啡巧克力粒核桃曲奇

Ingredients :
125g butter(牛油)
120g brown sugar (黄糖)
30g caster sugar (细砂糖)
1 egg(鸡蛋)- grade A
1 tbsp instant coffee powder (即溶咖啡粉)
1 tbsp boiling water (热水)
1 tsp honey (蜂蜜)
1/2 tsp coffee essence(咖啡香精)
220g plain flour (普通面粉)
1 tsp baking soda (苏打粉)
1/4 tsp salt (盐)
60g chopped walnuts(核桃,切碎)
120g chocolate chips (巧克力粒)


PREPARATION:
1. Preheat oven to 180°C. 

2. Mix 1tbsp boiling water with 1tbsp instant coffee powder, set aside.

3. Sift together flour, baking soda and salt.

4. In a large bowl with an electric mixer beat together butter and both sugars until light and fluffy. 

5. Beat in egg and then add in coffee mixture, honey and coffee essence until combined well.

6. Beat in flour mixture until combined well.
Stir in chopped walnuts and chocolate chips and combined well.

7. Arrange teaspoons of dough about 1 inch apart on baking sheets and bake in preheated oven at 180°C for 18-20  minuets or until golden. 

8. Cool cookies on sheets 1 minute and  remove to wire racks to cool completely.
