Stained Glass Cookies

When I saw this stained glass cookies, I know I must make these cookies because they looked so pretty! This cut out cookie filled with colorful hard candy in the center, after baked, looks like colored glass... they are not only pretty to look at but are delicious to eat!😋😍

**I used leftover candy cane to make this cookies. It's better to use clear and bright coloured hard candy, so the colour of melted candy looks better and clearer.😉

Stained Glass Cookies

Ingredients:
1 1/2 cups (195 g) all purpose flour
1/4 tsp (1 g) baking powder
1/4 tsp (1 g) salt
1/2 cup (113 g) unsalted butter, at room temperature
1/2 cup (100 g) granulated white sugar
3/4 tsp (3 g) pure vanilla extract
1 large egg (50 g), at room temperature
1/2 cup (90 g) crushed hard candy( I used candy cane)

Method:
1.  In a bowl, whisk the flour with the baking powder and salt. 

2. With an electric stand mixer,  beat the butter until smooth. Add the sugar and vanilla extract and beat until light and fluffy. 

3. Add the egg and beat until combined.

4. Add the flour mixture and beat until you have a smooth dough.

5. Divide the dough in half and then roll each half between two sheets of parchment paper until it is about 1/8 - 1/4 inch thick. (As you roll, periodically check the top and bottom sheets of parchment and smooth out any wrinkles.)

6. Place the dough on a baking sheet (along with the parchment paper) and place in the refrigerator until firm (about an hour).

7. Preheat oven to 180C and place the oven rack in the center of the oven.

8. Once chilled, remove one half of the dough from the refrigerator and peel off the top piece of parchment paper. Using a cookie cutter, cut out the cookies. 

9. Place the cookies on a baking sheet, lined with parchment paper, spacing the cookies apart. Then use a smaller shaped cookie cutter to cut out the centers of the cookies. (Gather up the scraps and again, roll out the dough, chill, and then cut out the cookies.)

10. Separate the hard candies by color. Unwrap and place each color of candy in a separate plastic freezer bag and crush.

11. Fill the entire cut out of each cookie, right to the center of the dough, with the crushed candy. 

12. Bake cookies for about 10 minutes (depending on size) or until the edges are just starting to brown and the candy has completely melted. Rotate your baking sheet front to back about halfway through baking. 

13. Remove from oven and let the cookies cool completely on the baking sheet before transferring to a wire rack.
