Red Velvet Cake 红色天鹅绒蛋糕

This Red Velvet cake  with cream cheese frosting is so moist, fluffy and velvety. Perfect cake for holidays, birthdays, valentine’s day or any occasion.  This cake consists of three layers.Each layers were frosted with cream cheese frosting and on top decorated with red velvet crumbs.

🍒Red Velvet Cake with Cream Cheese Frosting🍒

Ingredients:
For the cake:
2 cups (200g) cake flour 
2 tbsps (15g) Cocoa powder
1 tsp Baking powder
1 tsp Baking soda
1 tsp Salt
1 cup (200g) Sugar
1 cup (240ml) buttermilk, room temperature 
1 cup ( 230g) Vegetable oil
1 tsp white Vinegar
2 Eggs
1/2 tbsp Red velvet emulco( or 1-2 tablespoons Red food coloring )
1 tsp Vanilla extract
1/2 cup hot water

For the frosting:
250g Cream cheese, room temperature 
60g unsalted butter, room temperature
1cup (110g) Powdered sugar 
1 tsp Vanilla extract

Directions:
1. Preheat oven to 180C.
2. In a large bowl sift flour, cocoa powder, baking powder, baking soda and salt. Stir and set aside.
3. In a separate large bowl, beat oil, sugar and eggs until smooth. Add vanilla extract, buttermilk and beat until combined. Gradually add the dry ingredients and mix after each addition until well combined. Add hot water and vinegar, mix well  .
4. Pour the batter into 9-inch (23cm)  baking pan lined with parchment paper. 
5. Bake 40-45 minutes, until a toothpick inserted into the center comes out clean. 
6. Cool the cake in the pan on a wire rack for 10 minutes. Remove from the pan, then let cool completely. 

Make the frosting: in a large bowl, beat cream cheese, butter, powdered sugar and vanilla extract. Beat until smooth and creamy. 

Assemble the cake: Cut the top of the cakes and make crumbs. Set aside. Place one cake layer with flat side down. Spread a layer of frosting, place the second layer of cake on top of the frosting and spread a layer of frosting. Place the third layer of cake on top of the frosting and frost the top and decorate the cake with the crumbs.

Notes:
• All cake ingredients should be in room temperature
• You can use all-purpose flour or cake flour
• Instead of buttermilk you can use milk 1 tablespoon vinegar (mix and let stand 5-10 minutes).
• The vinegar that makes a huge difference, acid reacts with the leavening agents to give you a fluffier cake.
•  The hot water to give you a nice and moist cake.
