Purple Sweet Potato Cotton Cake 紫薯棉花蛋糕 

Ingredients:
蛋黄 egg yolk   3
植物油 vegetable oil   40g
牛奶  Milk  35g
砂糖 sugar 15g

紫薯泥 Purple Sweet Potato puree   50g
低筋面粉 cake flour   55g

蛋白 egg whites   3
糖 sugar   55g
柠檬汁Lemon juice 1/2tsp


Method:
1. Hand whisk egg yolks and sugar till pale.
2. Add in oil, mashed potato and milk and mix well. 
3. Add in sifted flour into the batter and mix well. Set aside.
4. Beat egg whites in high speed till foamy, add in sugar gradually and beat it till soft peak formed.
5. Take 1/3 portion of meringue to mix with egg mixtures till light.
6. Fold in the balance of meringue to egg mixtures, put few drops of lemon juices to change the color tone, combine well.
7. Pour cake mixture into 7'' baking pan, tab the pan to remove air bubbles .
8. Bake in the bottom third rack at 150°C for 70-80 minutes(water bath).
9. Once it done, remove from oven and invert it. Let it cool completely before unmould it. 

方法:
1. 用手搅拌蛋黄和糖至变白。
2. 加入油,紫薯泥和牛奶,搅拌均匀。
3. 将筛过的面粉加入面糊中,搅拌均匀。搁置。
4. 用速搅拌蛋白至起泡,逐渐加入糖并将其打至中等硬度。
5. 取1/3份的蛋白糊,与蛋黄糊混合均匀。
6. 将蛋白糊全部倒入蛋黄糊搅拌均匀,放几滴柠檬汁以改变色调,并充分混合。
7. 将面糊倒入7“ 烤模里,轻敲烤盘去除气泡。
8. 在150°C的底层第三个架子上烘烤70-80分钟(水浴法)。
9. 从烤箱中取出并倒置,让其完全冷却后才脱模,切片享用。
