Light Fruit Cake 圣诞干果磅蛋糕 (2 )

Finally, water came ... my hands started to itch again!😅 Actually, my dried fruits have been soaked in brandy for a few days ... I better use them now for baking cakes!😘

终于,有水来了...我的手又开始发痒了!😅 实际上,我的干果已经浸泡在白兰地中几天了……我最好现在快快把它们用来烤蛋糕了!😘

Ingredients :
250g    dried mix fruits (candied mixed peel, candied red & green cherries and raisins)
50g      dark raisins
30g      orange peels
3 tbsps brandy 
 ~ soak all with brandy overnight or two days.

115g     butter (room temperature)
100g     sugar
3           eggs
1/2 tsp  vanilla extract
1/4 tsp  almond extract
195 g    all-purpose flour
50 g      ground almonds
1 tsp      baking powder
3tbsp     fresh orange juice
1/4 tsp   salt
1 tbsp    zest of lemon 
60 ml    milk 
~ Sifted flour, grounf almond, baking powder and salt together)


Method :
1. Prepare a 9 " loaf cake tin .
2. Cream butter and sugar until light and fluffy.
3. Beat in eggs, one by one, beating well after each addition.Add in zest of lemon, vanilla & almond extract & along with orange juices, and beat until incorporated.
4. Beat in half the flour mixture just until incorporated. Then beat in the milk and then the remaining flour mixture.
5. Fold in soaked mixed fruits.
6. Place batter into lined/greased tin.
7. Bake in a preheated oven at 180C for 1 hour or until a skewer stuck in the middle comes out clean.
8. Let the cake cool in the loaf tin for 10 min before removing from loaf tin and leave it to cool completely on the rack.

50克       深色葡萄干
30克      橙皮
3汤匙    白兰地
 〜将所有配料浸泡白兰地一整夜或两天。

材料:
115克     黄油(室温)
100克      糖
3个          鸡蛋
1/2茶匙  香草精
1/4茶匙  杏仁香精
195克     通用面粉
50克       杏仁粉
1茶匙      发酵粉
1/4茶匙  盐
3汤匙鲜  橙汁
一汤匙    柠檬皮
60毫升   牛奶
~(面粉,杏仁粉,发粉和盐一起过筛。)

方法 :
1. 准备一个9英寸的长方形蛋糕烤模。
2. 将黄油和糖打至轻盈蓬松。
3. 将鸡蛋逐个加入打匀,加入香草精和杏仁香精以及橙汁,搅拌均匀。
4. 将一半的面粉混合物加入搅拌均匀。然后加入牛奶,再加入剩余的面粉混合物搅拌均匀。
5. 加入浸泡过的混合水果,用刮刀拌均匀。
6. 将面糊倒入烤模中。
7. 在180℃的预热烤箱中烘烤1小时或直到考熟为止。
8. 让蛋糕在烤模中冷却10分钟,然后再从楷模中取出并完全冷却在架子上。
