Char Siew Buns叉烧餐包4

I made char siew buns again! 😚It's slightly modified from my previous recipe(actually, I made a mistake of the amount of milk).😅 Luckily, these buns are super soft... but it turned into flat round buns after baking.  I think I should use a base to hold the shape next time.😀

Char Siew Buns

* Makes 14 buns

(A)Tangzhong:
Bread Flour 215g
Full Cream Milk 125g(cold)
Instant Yeast 2g

Method:
1. Mix the (A) for 3 mins on low speed till a rough dough has formed.
2. Ferment at least 4-5 hours in room temperature or keep in fridge for overnight.

(B)Basic Dough:
One quantity of above Tangzhong
Bread Flour 90g
Plain flour 50g
Full Cream Milk  120g
Egg 30g
Instant Yeast 4g
Salt 5g
Sugar 60g
Milk Powder 10g
Butter 45g

Eggwash:
Balance of half egg + 1tbsp milk/water

Method:

1. Tear the Tangzhong sponge dough into pieces and add in (B) ingredient and knead until smooth dough(except butter).

2. Then add in butter continue to knead til the dough is fully developed. Remove the dough from the mixing bowl, the dough is quite tacky, use a scraper to remove it. Set aside to allow it to proof for 45mins or untill the dough has double in size. 

3. Punch down the dough to expel air, devide into 55g portions and shape to round balls and rest for 10 mins.

4. Flatten the dough and fill it with char siew filling( *recipe for char siew filling is at below) , wrap and seal, then shape to ball. Place buns on a lined baking tray, seam side down. Proof for 45 mins or until double in size.

5. Egg wash the top of the buns. Sprinkle some sesame seeds.

6. Bake in a preheated oven of 180C for 15 mins or until golden brown.

7. Remove the buns from the oven and cool on the rack. Store in airtight container.

*Fillings: ( The quatity of the ingredients, I agak-agak only)😉

Ingredients:
400g Char Siew (chopped)
200g Mince pork
1/2 stick of Carrot (diced)
3-4 clove Garlic (chopped)
1 big yellow Onion (chopped)
Spring onion (chopped)
Oil 

Seasoning:
2tbsp Char siew sauce 
1 tbsp Black soy sauce 
2 tbsp Osyter sauce 
1 tbsp Honey
1 cup Water 
Pepper to taste
Starch water( 1/2 tbsp starch + 2 tbsp water)

Directions:
1. Heat some oil, saute chopped garlic, chopped onion and diced carrot . 
2. Add in some mince pork and fried. Add in chopped char siew (I used leftover char siew) and chopped spring onions and continue frying.
3. Add in Char Siew sauce ( I used some leftover char siew sauce), black soy sauce,  osyter sauce and honey to taste. Add a cup of water and simmer.
4. Add some starch water and sprinkle some pepper and simmer for 30 seconds then dish out, set aside.
