Strawberry cake草莓蛋糕

见冰箱里头还有一盒草莓,没有人吃,所以就决定做这个草莓蛋糕来庆祝爱人的生日吧!一来又可以用掉草莓,免得坏了丢掉;二来又可以品尝到草莓味的蛋糕,一举两得!哈哈哈。。。😄蛋糕没有华丽的装饰,简简单单的只有满满的爱心💗。蛋糕体松软湿润,配上淡淡清香的鲜奶油和酸酸甜甜的草莓,好吃哦!😋

I saw a box of strawberries in the refrigerator, nobody eats it, so I decided to use these strawberries to make a strawberry cake to celebrate my husband's birthday! 😘The cake is not decorated, simple as it. The cake texture is soft and moist, pair with a light whipped cream with sweet and soury strawberries, it's delicious!




I should slice the cake with a sharp knife instead of a plastic cake knife, then the cake will free of extra crumbles and mixture!😅

Ingredients :

4 Eggs 
130g Sugar 
13g Corn syrup
3g Vanilla extract
120g Cake flour (1 cup)
33g Melted unsalted butter (2 Tbsp)
55ml Milk

Strawberry mixture:
250g Strawberry
Whipped cream (300g whipping cream + 30g sugar)

Method:

1.Combine eggs , sugar , vanilla extract, and corn syrup in a bowl and place over a pot of hot water. Mix until combined and has reached a temperature of 40 degrees Celsius. Remove from pot, using an electric mixer beat the mixture until pale, fluffy, thick and double in size.

2.Sift in plain flour into the egg mixture. Gentle mix with a spatula in a folding motion until combined. Don’t worry about lumps for now. Add melted butter and milk together in a separate small bowl. Add in a spatula amount of the batter to the butter and milk mixture and mix gently until combined. Then add to the main bowl. Mix gently in a folding motion until combined. 

3.Pour into 6"cake pan and bake for 50-60 minuets or 7"cake pan and bake for 35-40 minuets at 170 degrees Celsius. 

4.After cake is out of the oven, transfer to a cooling rack and remove the baking paper and let it cool completely. Cut into 3 equal slices. 

5.In a bowl add whipping cream and sugar and beat with an electric mixer until fluffy and thick. Add diced strawberries  and mix with spatula. 


6.Layer the cake with cream mixture.
