Rotiboy/Mexican Coffee Bun咖啡墨西哥面包

很久没有做咖啡墨西哥面包来吃了!今天突然很想吃,于是就做了几个来吃!孩子们都说好吃!😊 你们喜欢就自己动手做来吃吧,呵呵!😜
我用尽所有的咖啡皮配料,这就是为什么配料溢出面包边缘的原因。 太贪心了...哈哈哈...😂不过,我还蛮喜欢吃这些边边的咖啡脆皮,很香脆。

I have not made this Mexican buns for a long long time! I suddenly craved for it, so I made a few Mexican buns! My children said that they are delicious!😀
I used up all the coffee toppings, that's why the toppings overflowed the edges of the bread. Too greedy... hahaha... 😜However, I like to eat these overflowed coffee toppings on the edges, very crispy.




Ingredients(Make 4 Buns):

(A) Dough:-
150g( 1 & 1/4 cup ) Bread flour
18g ( 1 & 1/2 tbsp ) Caster sugar
2g ( 1/2 tsp - lesser ) Salt
8g ( 1 tbsp ) Milk powder 
2g ( 1/2 tsp full ) Instant dried yeast
100ml ( 1/3 &  1/8 cup ) Warm milk
15g ( 1 tbsp ) Soften butter


(B) Butter Fillings:-
40g ( 2 & 1/2 tbsp - lesser ) Soften butter 
20g ( 1 & 1/2 tbsp full ) Caster sugar

(C) Topping(Coffee Mixture):-
40g ( 2 & 1/2 tbsp - lesser ) Soften butter
35g ( 3 tbsp - lesser) Caster sugar
1 Egg yolk   1/2 Egg white
40g ( 1/3 cup ) All purpose flour
2g ( 1 & 1/2 tsp ) Instant coffee powder
2 tsp Hot water

Method:
1. Mix all ingredients  (A) into the mixing bowl and knead for 15mins (except butter).
2. When dough is made, add butter and knead for another 15mins till dough is stretchy.
3. Use a big bowl, grease the inside with a thin layer of oil. Put in the dough inside the bowl and cover the bowl with a damp cloth or plastic wrap. Let proof for one hour or  until the dough has doubled in size.
4. While proofing, make the filling. Mix all ingredient (B) and mix well. Then wrap in plastic wrap and keep in the fridge.
5.  Once the dough is ready, divide them equally into 4 portions. Cover with plastic wrap and leave for 15 min .
6. Flatten the dough then add a portion of butter mixtures in the middle of each ball and form into a ball.
7. Lined it up into a baking pan and keep it in the oven (without turning on) for 1 hour to rise.

Making coffee mixture: 
1. Mix instant coffee powder with 2 tsp of hot water. 
2. Add softened butter and sugar into another bowl and mix until combined.
3. Add in 1 egg yolk and mix and then add in 1 egg white and mix well.
4. Add in the coffee mixture.
5. Sift in  flour and fold.
6. Put into a piping bag and pipe the mixture over the buns in a spiral shape until it covers the top of the bun.
7. Bake at preheated oven 180 C for 15min depending on your oven.
