I tried to use up the remaining beef bacon, besides making burger, I made this tomato quiche.
PIE CRUST :
300g plain flour
1/3 tsp salt
150g butter, very cold
100ml cold water
Fillings :
25g Butter/oil (for cooking)
1 Big onion(Chopped)
1 tsp Chopped garlic
2 Beef bacon (Chopped)
2 Tomatoes (chopped)
50g Mozarela / Cheddar Cheese (grated)
1 tsp Dried chopped origano
1 tsp Dried chopped parsley
Pinch of salt & black pepper
Egg mixture:
3 Eggs(slightly beaten)
150g Milk
1 tbp Parmesan cheese
1 tsp Mix spices
Pinch of salt & black pepper
Method :
1. Cut butter into flour and add in salt.
2. Use a fork gradually blend the butter until the mixture resembles fine breadcrumbs.
3. Then stir in water and mix well into a dough.
4. Wrap up dough in cling film wrap and chill in the refrigerator for 30 minutes before rolling out.
5. Cut the rolled out pastry to fit the pie pan.
6. Prick with fork and bake blind at 180c for 10 minutes. Leave to cool.
For the fillings:
1. Heat butter, add in onion and cook till soft. Add in garlic & beef bacons and fried till cook. Add in tomatoes & seasoning and cook for 3 minutes then dish up to cool.
2. Mix the milk mixtures with eggs, Parmesan cheese, seasoning & spices.
3. Pour the fillings onto the pastry , then pour in the eggs mixtures onto it. Sprinkle some grated cheeses and arrange some slices of tomatoes on top.
4. Bake in the oven for 35 minutes at 180c.
