Taro Filling紫薯芋泥月饼馅


材料:
芋头 ~ 500g (切丁备用)Taro, diced
紫薯 ~ 150g (切丁备用) Purple sweet potato,diced
细砂糖 ~ 150g (甜度可自己调,我做减糖的)Sugar
细盐 ~ 1/4茶匙 Salt
糯米粉 ~ 1 1/2汤匙 Glutinious rice
清水 ~ 200ml Water
食油 ~ 45ml Cooking Oil

做法:
1) 把芋头和紫薯一起蒸大概25-30分钟至软。
2 )把糖、盐、糯米粉和清水混合。
3 )乘热把蒸熟的芋头和紫薯压成泥,然后加入(2),拌至完全混合,然后用搅拌机把紫薯芋泥搅拌成泥酱状。
4)烧热不粘锅加入食油,倒入搅拌好的紫薯芋泥以中火煮大概30-40分钟分钟至干身顺滑和不黏锅的馅,必须不停的搅拌。(每个火炉的热度有别,时间只供参考)

提示:
1.可预先把馅料煮好,放入保鲜盒,收藏在冰箱冷冻格,要使用前先放在室温回温。
2.如果芋泥比较稠可以多加入清水。
3.不同品种的芋头做出来的芋泥馅颜色会有差别。 
4. 如果使用的芋头有很多粘液,那么可以不必加糯米粉。

Method:
1) Steam the taro and purple sweet potato for about 25-30 minutes to soft.
2) Mix sugar, salt, glutinous rice flour and water.
3) Press steamed taro and purple sweet potatoes, then add into (2), mix well, and then blend it into a puree with a blender.
4) Add cooking oil to a non-stick pan, pour in the mash and cook for 30-40 minutes on medium heat until the paste is smooth and non-stick onto pan. ( time is for reference only)

Tips:
1. The paste can be cooked in advance, put into an airtight container, and stored in the freezer compartment. Keep it warm at room temperature before use.
2. If the paste is too thick, add more water.

3. If the paste is very starchy, you don't need to add glutinous rice flour
