1 tsp baking soda
1 tsp salt

(B)
150g soft brown sugar
40g quick or old fashioned oats
2 tbsp corn flour

(C)
230g unsalted butter, softened
70g granulated sugar

(D)
2 large egg
1tsp vanilla extract

(E)
100g chocolate chips
50g Macadamia Nuts( Toasted and chopped) or any nuts

Instructions:

1. Put (A) in a medium mixing bowl. Stir with the wooden spoon to mix the ingredients. Set the bowl aside.

2. Put (B) & (C) in a large mixing bowl, with an electric mixer set on medium-high speed, beat until the mixture is well blended. Add the (D) egg and vanilla and beat until the mixture is smooth and creamy. (As you beat, turn off the mixer occasionally and scrape down the sides of the bowl with a rubber spatula.)

3 With the mixer set on low speed, gradually add the (A)flour mixture and beat until blended. Stir in (E) the chocolate chips and the chopped nuts (if using).

4. Cover the dough with plastic wrap and chill in the fridge for one hour.

5. Drop a teaespoon cookie dough onto the greased baking sheets, spacing the mounds about 2 inches apart.

6. Place the baking sheets in the preheated oven at 350°F (180°C). Bake until the cookies are nicely browned, about 20 minutes. The baking time is depending the size of the cookie dough.

7. Let the cookies cool for 3 to 4 minutes. Carefully slip a spatula under each cookie and transfer it to a rack. Let the cookies cool completely before storing into a container.

Happy Baking!
