3D flower Baked mooncakes 3D浮花烤月饼

This year's Mid-Autumn Festival will add more memories with these beautiful and creative floating moon cakes. My first attempt for making these 3D flower mooncakes. Too beautiful to eat!😘

A. Sugar Syrup
300gr of sugar
520 ml of water
2 tbps lemon juice
1/3 tsp salt

Method:
1.Dissolve the ingredients on low heat for 40-50 minutes.
2.The final product is about 360-390ml of sugar syrup.
3.Leave to cool.

B. Filling: 
1. Use red bean paste or other filling as you wish.
2. Each one weigh 100g

C. Skin
100g All purpose flour
20g shortening
70g plain sugar syrup
Gel food coloring(optional)

Method:
1. Add a few drops of food coloring to the sugar water mixture.(optional)
2. Pour sugar syrup into flour mixture and mix well.
3. Wrap the dough in a cling wrap rest the dough for 30 minutes. 
4. Divide the dough 45g each . Flatten the dough, then add it filling. 
5. Dab a little flour on dough balls and molds, then mold the dough. Gently take out the dough. Leave the dough aside while preparing the decorating step.

D. Shaping
* Formula for flower color pigments
25g All purpose flour
5g shortening
18g plain sugar syrup
Gel food coloring

1. Mix all ingredients and set aside.
2. You can create your own style and theme such as flowers, full moon, lotus, mid-autumn lantern ...
3. Roll out the dough moderately, as the dough is too thin to stand.
4. When baking the colour will fade a little, so you should balance the color adding accordingly.
5. Apply water as a glue for mooncake and flower with a brush.

Remember to cover up the shaped flowers with cling wrap to avoid it to get harden.

E. Baking 
1. Preheat the oven at 160C before baking.
2. 1st baking: 7 minutes. Put on the lower rack in the middle of the oven.
3. After 7 minutes, remove from oven and spray water to keep the mooncake moist.
4. Second baking: 10 minutes
5. Spray out water again.
6. Last baking: 8-10 minutes.
7. Leave mooncakes cool completely and enjoy.

A.糖浆制作
300g 糖
520ml 水
2 tbps 柠檬汁
1/3tsp 盐

方法:
1.用小火煮40-50分钟。
2.煮好的糖水约有360-390ml。
3.放置一边备用。

B.馅料:
1. 用红豆沙或其他馅料都可以。
2. 分割每个重100g

C.月饼皮
100g 中筋面粉
20g 白油
70g 糖浆
食用色素

做法:
1.加入几滴食用色素在糖浆中。(可以不放)
2.将糖浆倒入面粉混合物中,搅拌均匀。
3.将面团裹在保鲜膜中,放置30分钟。
4.将面团分割每个45g。将面团压平,然后裹入馅料。
5.在面团球和模具上撒一点面粉,然后压入月饼模具中,轻轻取出面团。将面团放在一边,准备装饰的步骤。

D.塑造浮花
*花色颜料配方:
25g中筋面粉
5g 白油
18g 糖浆
食用色素

方法:
1.混合所有成分并备用。
2.你可以创造自己的风格和主题,如鲜花,满月,莲花,中秋灯笼...
3.适当地擀开面团,做造型。
4.烘烤后颜色会稍微褪色,所以你应该拿捏调颜色的浓度。
5.用刷子涂抹水作为月饼和花朵粘合剂。

*记得用保鲜膜覆盖浮花,以避免它变硬。

E.烘烤
1. 预热烤箱160℃。
2. 第1次烘烤:8分钟。放在烤箱下层第二个架上烤。
3. 烘烤8分钟后,从烤箱中取出喷水以保持月饼湿润。
4.第二次烘烤:10分钟(放在烤箱中层)
5. 取出,再次喷水。
6. 最后烘烤:8-10分钟。
7. 取出,让月饼完全放凉。
