Red Bean Paste红豆沙馅

Red bean paste is a very common filling especially for making mooncake and bread. For making red bean paste, I can adjust the sweetness and it is much healthier than store-bought. It's a bit of time comsuming to make this red bean paste, but it's worth it.😊
红豆沙是一种非常常见的馅料,尤其适用于制作月饼和面包。自己制作红豆沙,可以调整甜度,所以会比商店买的更健康食用。 制作这红豆馅料是有点浪费时间,但还是值得的。😘


Ingredients 材料:
500g red beans (红豆)
1500ml water (水)
240g sugar (白砂糖)
200g  peanut oil (花生油)
80g maltose (麦芽糖)
salt 1g  1/4 teaspoon(盐)

Method:
1. Clean red beans, soak in water, keep in the fridge overnight.
2. Drain and add in 1500 water, bring to the boil, reduce to low heat and cook for 1.5 hours or until cooked.
3. Blend red beans into paste. 
4. Sieve the red bean for smoother paste texture.
5. Pour paste into wok, pour in oil, using medium heat stir-fry until almost dry. 
6. Pour in sugar and keep stirring until it turns almost dry. 
7. Lastly add in maltose, using low heat and keep stirring until it does not stick to the wok, add in salt and keep stirring for 3 more minutes. 
8. Transfer to a bowl and let it cool down. Cover with plastic wrap and keep in the fridge to store after cool down.

Note:
1. Can make about 1 kg of red bean paste.
2. If you aren't planning to use it all at once, wrap in plastic bag and store in Ziploc Freezer bag or container and can store in fridge for a week and freezer up to a month.
3. Red Bean Paste can be use for Mooncake, Bread, Dorayaki or Swiss roll filling.

方法:
1.清洗红豆,浸泡在水中,放入冰箱过夜。
2.沥干并加入1500水,煮沸后转至小火煮1.5小时或煮熟。
3.将红豆用搅拌机成糊状。
4.将红豆沙过筛以获得更光滑的糊状质地。
5.将过筛了的红豆沙倒入锅中,倒入油,用中火炒至油几乎完全吸收。
6.倒入糖并继续搅拌直至变得几乎固体状态。
7.最后加入麦芽糖,加热并继续搅拌直至不粘在炒锅中,加入盐并继续搅拌3分钟。 
8.转移到碗中让其冷却。盖上保鲜膜,冷却后放入冰箱保存。

提示:
1.可以制作约1公斤的豆沙。
2.如果您不打算即刻使用它,请用塑料袋包装并存放在Ziploc Freezer袋中或密封盒子,可以在冰箱中存放一周,存放冰箱可以到一个月。
3.红豆沙可用于月饼,面包,铜锣烧或瑞士卷的馅料。
