Red Bean Jelly Mooncake 红豆燕菜月饼

This sweet dessert is quite easy to make except that it’s a little time consuming but I’m sure your family and friends will definitely enjoy this refreshing jelly mooncake and appreciate it in this hot weather.😉
这个甜点很容易制作,除了它有点耗费时间,但我相信你的家人和朋友肯定会喜欢这个清爽的果冻月饼。😊





Ingredients :
A:
Jelly egg yolks(蛋黄燕菜):
2 tbsp caster sugar (细砂糖)
3/4 tsp agar-agar powder (燕菜粉)
200ml water (水)
1-2 drops orange colouring (橙色素)
1/8 tsp salt (盐)
B:
2 tbsp evaporated milk(淡奶)(I used fresh milk)

Method:
Place all ingredients A into a pot. Keep on stirring, let it come to a boil. Stir in ingredients B. Mix well, pour into egg yolk ice-cube mould. Cool then chill in refrigerator till set.
做法:将材料A放入锅内煮沸,熄火加入材料B拌匀,倒入蛋黄模形,待冷却后放入冰箱至凝固,取出待用。

Red bean jelly filling (红豆燕菜馅料)8pcs:
A:
2 tsp agar-agar powder (燕菜粉)
50g caster sugar (细砂糖)
150ml water (水)
B:
100g sweet red bean paste(甜红豆泥)
C:
100ml thick coconut milk (浓椰浆)
2 tbsp evaporated milk (淡奶)(I used fresh milk)

Method:
Place ingredients A into a pot. Stir well and bring it to a boil, reduce to low heat, add in ingredients B ,C and mix well. Pour into small mould. Gently place in a jelly egg yolk into each mould, leave to cool and till set.
做法:将材料A边煮边搅至滚,关小火加入材料B和C拌匀。倒入小杯里,在中间放入燕菜蛋黄,等待凝固取出待用。

Jelly mooncake exterior skin (燕菜月饼皮)8pcs:
A:
1 tbsp agar-agar powder (燕菜粉)
1 tbsp instant jelly powder (即溶遮哩粉)
100g caster sugar (细砂糖)
400ml water (水)
2 pandan leaves, knotted (2片班兰叶,打结)
B:
200ml coconut milk (浓椰浆)
1/4 tsp salt (盐)
2 tbsp evaporated milk (淡奶)(I used fresh milk)

Method:
Place ingredients A into a pot. Stir well and bring it to a boil, reduce to low heat, add in ingredients B mix well. Remove pot from heat. Pour a solution into mooncake mould, place in filling and fill solution to the brim. Leave to cooled, chill them in the fridge until firm. Unmould and serve !
做法:将材料A放入锅内煮沸,加入材料B拌匀。倒入少许月饼模内,放入馅料,再淋至满,待冷后放入冰箱,冷藏至凝固后取出。
