Mini Snowskin Mooncakes冰皮月饼

My kids like to eat snow skin mooncake. So, I made some mini snow skin mooncake with red bean filling and salty white lotus paste. 😉




Snowskin:

100 g of Fried Glutinous Rice Flour (Koufen)糕粉
30 g of Shortening白油
80 g of Icing Sugar 糖粉
150ml of  Cold Water 冷水
Food Coloring (optional)食用色素(可选)
A few drop of vanilla extract几滴香草精

Filling:
300g of filling 馅料

Instructions:
1.Sift together koufen, and icing sugar together.
2.Rub the shortening into the flour mixture.
3.Combine the water, vanilla extract and coloring, and add to the flour.
4.Mix until soft dough forms, and knead for about 5 minutes.
5.Divide the dough into 25g ball. Divide your filling into 25g ball.
6.Flatten your dough and put one filling ball onto it and wrap it around.
7.Dust them with some koufen, place it in the mooncake mould and press the mooncake out. Place it on floured surface.
8.Put them into airtight container and leave them to chill in fridge. Serve them cold. Put in fridge up to a week.

做法:
1.把糖粉和糕粉一起过筛。
2.将白油加入面粉混合物中拌均匀
3.将水,香草精和色素混合,然后加入面粉中。
4.混合至形成软面团,并揉捏约5分钟。
5.将面团分成25g一个。 将馅料分成25g一个。
6.将面团擀圆,将一个馅料放在上面并将其包裹起来。
用月饼模具将月饼压出来。 
8.将它们放入密封容器中,放入冰箱冷藏。 放入冰箱可以存放长达一周。
