I still have some pumpkin puree, so I decided to make a pumpkin loaf.
Pistachio nuts Pumpkin loaf
Ingredient:
200g bread flour
120g pumpkin puree
1½ tsp instant active yeast
1½ tbsp brown sugar
1 small egg (keep 1 tbsp egg mixture for egg wash)
½ tsp salt
65ml fresh milk
20g unsalted butter

1½ tbsp brown sugar
1 small egg (keep 1 tbsp egg mixture for egg wash)
½ tsp salt
65ml fresh milk

Method:
- Add all ingredients in the mixer bowl and knead until it forms a dough. It takes around 10 to 15 minute.
- Set it aside to rise for an hour or till double in size.
- Line the bread pans (9 X 5 inch) with baking sheet.
- Punch down the bread dough to release the air. Divide dough into 2 equal portions. Roll out each dough with a rolling pin into rectangle shape. Sprinkle some pistachio nuts, roll up the dough.
- Place 2 loaves in bread pan. Let it rise for another 45 minutes or until dough is double in size.
- Brush the dough with egg wash (mixture of 1 tbsp egg with 1 tsp water).
- Bake at preheated oven at 180℃ for 30 minutes.
- Remove bread to cool on rack completely.

- 将所有配料加入搅拌机的碗中,揉搓直至成团,大约需要10到15分钟。
- 将它放在一边发酵一小时或者直至达到双倍大的面团。
- 将面包盘(9 X 5英寸)放上烘培纸。
- 拍打面团,释放空气。 将面团分成2等份。 用擀面杖将每个面团擀成长方形。 加入一些开心果,卷起面团。
- 将2个面团放入面包盘中。 让它再发酵45分钟或直到面团双倍大。
- 用鸡蛋液(1汤匙鸡蛋液和1茶匙水混合)刷在面团上面。
- 在已预热的烤箱中180℃下烘烤30分钟。
- 取出面包,放在架上直至完全冷却。
