This quick and easy banana muffin recipe uses only two ripe bananas to make. They’re delicious and lovely with a cup of coffee or tea.😘
有時候香蕉沒吃完放到都快爛掉了又覺得可惜. 所以就乾脆索性的把香蕉用掉,做了这个简单的食谱,口感不会粗,很松软湿嫩。再配上一杯咖啡或热茶,满足!😊
Ingredients:
3 eggs ( large or A size), cold from fridge
100g caster sugar
180g ripe bananas, mashed ( 2 large banana)
150g cake flour
1/2 tsp Baking powder
1/4 tsp Baking soda
100g Corn oil
1/2 tsp vanilla essence
A pinch of salt
Method:
Note 1: I baked the banana muffins at 160C to get an even and flat round top. You can bake it at 180c to get a nice dome shape muffins.
Note 2: I used two large eggs and one small kampung egg, so I made 11 muffins only. If you used three large eggs, makes 12 muffins .

180克成熟香蕉,用叉子压成泥(2个大香蕉)
150克面粉
1/2茶匙泡打粉
1/4茶匙小苏打
100克玉米油
1/2茶匙香草精华
一小撮盐
做法:
1.将烤箱预热至180℃。
2.将面粉,泡打粉和苏打粉一起过筛,搁置。
3.在搅拌机中以最大速度搅拌冷蛋,糖,盐,香草精和香蕉,搅拌至蛋黄糊变浓稠,乳白色。
5 加入面粉,拌匀。
6.加入玉米油,拌匀。
7.倒入蛋糕纸杯里约9分满。将烤箱温度降至160℃,烘烤25-30分钟或至蛋糕表面呈金黄色。
注意1:我用160C烘烤香蕉松饼,以获得均匀平坦的圆顶。 你也可以用180c烘烤它,以获得一个漂亮的圆顶形松饼。
注意2:我用了两个大鸡蛋和一个小甘榜蛋,所以我只做了11个松饼。 如果你用了三个大鸡蛋,应该可以制作12个松饼。

- Beat cold eggs, sugar, salt, vanilla essence & banana at max speed in a mixer till thick and stiff.
- Fold in flour & mix well.
- Add in corn oil & mix well.
- Pour into cupcake liners for about 90% full. Reduce the oven heat to 160C, and bake for 25-30mins or until golden brown at middle rack.
