Almond Coffee Cake 杏仁咖啡蛋糕

On a whim, I made this coffee cake because the ingredients were very simple, so I quickly prepared the ingredients and started to make it.

心血来潮的就做了这个咖啡蛋糕,因为材料简单,所以就马上准备材料做啦!😉





Ingredients:
Room temperature eggs: 4
Sugar : 100g
Cake flour: 120g
Sunflower oil : 30g
Coffee Powder: 6g
Hot water :30g

Method:
1. Add coffee powder to hot water and stir til dissolve.
2. Preheated oven at 175C. Coated the 6" baking pan with oil and placed baking paper at the bottom.
3. Sift the flour and set aside.
4. Use a pot of hot water, beating the egg mixture over the hot water until slightly foamy, add in the sugar and continue beating until it became a thick batter. Remove from hot water.
5. Add in coffee and mix well.
6. Add in flour in two batches and gently mix well.
7. Add in oil and gently mix well.
8. Pour the batter into a prepared baking pan, tap on the table to release air, put it in the preheated oven at 175C and bake for 10 minutes, sprinkle some almonds or walnuts on top and continue to bake for 40 minutes. 
9 After done baking, tap on the table to release the air, and invert the cake on the cake rack.
10. Remove the baking paper and let it cool completely on the rack.

材料:
室温蛋4只
糖100g
低筋面粉120g
油30g
即溶咖啡粉6g
热水30g

做法:
1。 咖啡粉加入热水,搅拌溶解即可。
2。 预备一盘热水,不用滚的,座入蛋,打至起泡,加入糖,全程高速打发,大约打至6到8分钟。
3。 预热烤炉175C度。
4。 慢慢打发,打至纹路,蛋糊滴落不容易消失。
5。 移开热水,加入咖啡,轻手搅拌。
6。 分二次加入过筛面粉,轻手搅拌,搅拌至无粉粒即可。
7。 加入油,轻手搅拌均匀。
8。 倒入已经铺好烘培纸的6寸烤盘,入炉前,噔几下。
9。 175C度烤10分钟,加入核桃粒或杏仁片,继续烘烤45分钟至熟透即可。(我在烘烤之前先撒上杏仁片在蛋糕糊上,然后直接烤40分钟)
10。出炉后,噔几下,即可倒扣,脱模并撕开烘焙纸,待凉。
