Roasted Pork (Siu Yuk) 烧肉

My family likes to eat roasted pork and as well as me....😗I’ve cooked this several times and it always turns out absolute perfection.😉

This is a simple recipe that I am looking for—easy, hassle-free and it came out beautifully succulent on the inside and nice crackle on top. This is a melt-in-your-mouth roasted pork belly…. Ahhh, the thought of it sets my mouth watering.😋

I have to say that this Siu Yuk recipe is probably one of the easiest recipes around. There is no need to poke the pork skin and no pre-boiling the pork belly. Just very simple and only few steps are involved and the result is almost guaranteed and fail-proof.The pork belly is juicy and tender, with the melt-in-your-mouth pork fat, and the taste is salty, aromatic (from the garlic and 5-spice powder).

Roasted Pork (Siu Yuk) 烧肉 

Ingredients
1 kg pork belly
1 tsp pepper powder
1 teaspoon five spice powder
2 tsp salt 
Enough sea salt for coating the pork skin


Instructions:
1. Wash and use paper towels to dry the pork belly.
2. Rub the meat side with the pepper, salt,  five spice powder and garlic powder(optional). Set aside for 30 minutes or keep in the fridge.
3. Preheat the oven to 180C.
3. Then layer the top of the pork belly(skin) with the sea salt evenly.
4. Place the pork belly on a wire rack(top rack), and place a pan below of the pork belly and bake for 1hour and 30 minutes. While baking, the oil will drip to the bottom pan.
5. Bake until the salt crust forms, the salt should be hardened.Remove the pork belly from the oven, pull off the salt crust and discard.
6. Raise the heat of oven to 240C, place the pork belly back in and roast for another 30-40 minutes.
10. Remove from oven and let set for 10 minutes. Cut and serve.
