Chocolate Cake

This is a quick and easy to make chocolate cake recipe. No butter, No egg and No mixer needed! 
You can frost it with Chocolate Ganache or just dust the top of the cake with a little powdered sugar or cocoa powder and serve it on its own or with whipped cream or a scoop of ice cream... whatever you like... It's delicious! 😊


Ingredients:

1 1/2 cups all-purpose flour
1 cup sugar
1/4 cup unsweetened cocoa powder (preferably Dutch-processed)
1 teaspoon baking soda (not baking powder)
1/2 teaspoon salt

1 cup cool water
6 Tablespoons vegetable oil
1 Tablespoon fresh lemon juice or distilled white vinegar
1 teaspoon vanilla

Instructions:
  1. Preheat oven to 350° F. Grease a 9-inch cake pan.
  2. Sift dry ingredients into a bowl and set aside.
  3. In a measuring cup combine water, oil, lemon juice or vinegar, and vanilla.
  4. Add liquids to bowl & gently stir until there are no lumps (about 30 seconds).
  5. Pour into pan and bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool completely in the pan and frost, glaze, or dust with powdered sugar.
Frosting:
2 tbp butter
1 cup  powdered sugar
1 tbp  cocoa powder
1/2 tsp vanilla esence
3 tsp milk

Just whisk all ingredients together and spread it on the cake.

Chocolate Ganache:

6 ounces (170 grams) semi-sweet chocolate, finely chopped
3/4 cup (180 ml/grams) heavy whipping cream (35 - 40% butterfat content)
1 tablespoon (13 grams) butter, diced

Instruction: 
1. Place the chocolate in a medium sized stainless steel, or heatproof bowl. Set aside. 
2. Heat the cream and butter in a medium sized saucepan over medium heat (can also be heated in the microwave). Bring just to a boil. 
3. Immediately pour the cream over the chocolate and allow to stand for a few minutes. Stir until smooth, then let stand at room temperature until the Ganache has completely cooled .
4. Spread the Ganache on the top and sides of the cake.
