Sweet Potato Hee Ban 黄番薯喜粄

这个喜粄配方,整形时容易上手又不粘手,蒸出来又圆嘟嘟的,可爱得很呢,更棒的是,即使是冷了后,口感还是非常柔软好吃呢😘

黄番薯喜粄材料:

糯米粉125g
面粉125g
幼糖75g
酵母1茶匙3g
黄番薯75g
清水150g
粟米油15g

做法:

1. 将全部材料拌匀,搓成光滑面团(除
了粟米油), 然后,加入粟米油搓均匀,分割
55g粒,可以做9粒。

2. 放入椰丝馅(25g)后搓圆,放在已涂
油的香蕉叶上或烘培纸按扁,发酵30分钟。

3. 準备一锅热水,中小火蒸12分钟即可。打开小缝,静置5分钟后。

4. 小心打开盖子,以防水滴到喜粄上,取出待凉。

白糖椰丝材料与做法:
(A)
白糖- 70g
清水- 50g
海盐- 1/4tsp
班兰叶- 3叶

(B)
新鲜嫩椰丝- 200g.

(C)玉米粉- 1T. 清水- 2T. 拌匀备用。

1. 将(A)放进一个锅里煮至糖融化(稍微滚开)。
2. 加入(B)椰丝,不停翻炒。
3. 加入(C)后,不停翻炒,直到椰丝完全吸收水分,听到锅里发出“吱吱声”,熄火,拿开待凉。


Sweet Potato Hee Ban

Ingredients: 

glutinous rice flour 125g
flour 125g
Castor sugar 75g,
1 teaspoon(3g) of yeast
75g of yellow sweet potato puree
150g of water
Corn oil 15g

Instruction:
1.  Mix all the ingredients and knead them into smooth dough (except
Corn oil). Add in corn oil and kneed till a smooth dough, evenly divided
55g each, can be made 9 pieces. 

2. Add in coconut filling(25g) and round into a ball then slightly flatten it and put on a  banana leaf or baking paper and fermented for 30 minutes.

3. Prepare a pot of hot water and steam on midium heat for 12 minutes, turn off the heat and open the lid a little hole, let sit for 5mins.

4. Carefully remove the lid to avoid water dripping on Hee Ban, let it cool. 

White sugar coconut filling:
(A)
White Sugar - 70g
water - 50g
salt - 1/4tsp
Pandan leaf - 3 leaves

(B)
Fresh coconut shreds - 200g.

(C)
Corn flour - 1T.
water - 2T. Mix well.

1. Place (A) in a pot and cook until the sugar has melted (slightly boiled).
2. Add (B) shredded coconut and stir fry.
3. Add (C), stir fry until the coconut shreds completely absorb the water, you can hear the buzzing sound from the pot, turn off the heat, and remove from stove and let it to cool completely.
